Sun-Dried Tomato Spinach Pasta
A delicious vegetarian pasta dish full of sun-dried tomato and basil flavors. The spinach also provides a creamy mouthfeel. Fantastic recipe for a quick weekday dinner.

Cooking instructions
* Step 1
Cook pasta in slightly salted boiling water.
* Step 2
When pasta is almost fully cooked, remove pasta from water. Save 1/4 cup pasta water and drain the rest.
* Step 3
Get sun-dried tomato from jar. Drain the oil and chop the tomato finely.
* Step 4
Heat up another pan and add oil. Then add chopped sun-dried tomato and spinach.
* Step 5
When the spinach shrinks, add pesto sauce, pasta and pasta water.
* Step 6
Mix all ingredients well and continue cooking for 2-3 minutes.
* Step 7
Delicious Sun-Dried Tomato Spinach Pasta ready to serve! (Optional) add grated Parmesan at serving.
