Sweet and sour brinjal
Cooking instructions
* Step 1
Wash brinjal, cut into thin slices (lengthwise)
* Step 2
In a deep pan add oil and heat,
* Step 3
Now add brinjal slices, tomatoes, fry for 5 min, now add turmeric powder, chilli powder, cumin powder, and stir in medium flame until brinjal change colour
* Step 4
Now add water, cover and cook in low flame until brinjal become soft
* Step 5
Now add salt, jaggery powder, tamarind paste, mix well
* Step 6
Cover and cook in low flame for another 10 min (you should get thick consistency)
* Step 7
Serve with veg pulav, mutton and chicken pulav, or you can have with roti also
* Step 8
Store it in clean dry jar for 4 to 5 days
