Stir-fry Tofu with Miso Marinade

Stir-fry Tofu with Miso Marinade

I came up with this dish as I wanted to use up leftover miso paste in the fridge. It's a quick and easy recipe using pantry staples to create a meal packed full of umami flavour!

Cooking instructions

* Step 1

Combine all marinade ingredients and tofu in a large bowl. Mix well and set aside for at least 30 mins

* Step 2

Heat peanut oil in a wok over high heat. Add minced meat and stir well until thoroughly cooked, approx 1-2 mins.

* Step 3

Add capsicums and stir-fry for approx 3 mins. Capsicums should be cooked but still crunchy.

* Step 4

Add tofu mixture and stir through gently for approx 2 mins.

* Step 5

Add frozen peas and stir for approx 30 seconds. Turn off heat, add spring onions and cashew nuts. Stir through the residual heat.

* Step 6

Serve with brown rice.
