Chicken & Vegetables in Tamarind Broth >> Filipino Sinampalukan
Soup scooped over rice, that's how we like it! Try this healthy and light dish especially on chilly days. Although we eat it during summer too. Heeehee
You can get a Tamarind soup base (Knorr) at Asian or Filipino shops or you can also use the Thai Tamarind paste :) I have not tried it with Lemon or Lime, I think it would work, as the soup needs to have a hint of acidity/sourness...lemme know?

Cooking instructions
* Step 1
In a pot heat oil and sauté garlic, onions, ginger.
* Step 2
Add cut up slightly salted chicken. Cover and let the juices come out. Turn pieces on the other side once it has.
* Step 3
Add tomatoes. Add 1/2 cup water. Season with pepper. Drop in broth cube. Add fish sauce. Add kangkong stalks, beans, other harder veggies. Cover and simmer a few minutes.
* Step 4
Add the rest of water. Mix in Tamarind broth powder or paste (In photos- either works well). I like mine not overly sour for Sinampalukan (but super sour for pork Sinigang) so it's up to you how much, add to taste. Adjust if more fish sauce /salt is needed also.
* Step 5
Drop in the soft/leafy veggies. Bring to a quick simmer. Turn off heat and serve hot with rice.
