Clover & Caterpillar - Jouyo Manju (Wagashi)
This is a traditional Japanese sweet which is a bean paste ball wrapped with dough of grated Yamaimo & Jouyo-ko (rice flour). I made a four-leaf clover with four heart‐shaped Manju and tried to make a green caterpillar. Made heart shape Manju for a clover. They also can be sweets for St. Valentine's Day.
Cooking instructions
* Step 1
Ingredients for 2 sets. Dived the Yamaimo and the sugar into 2 equal.
* Step 2
Add a half of sugar (40g) into a half of grated Yamaimo (20g). Mix them well. Add the another half of sugar (40g) into the another half of grated Yamaimo (20g). Add 1/4 tsp of Matcha. Mix them well.
* Step 4
Put the white Yamaimo mixture into 50-55g of "jouyo-ko (rice flour)". Mix them. Put the rice flour onto the yamaimo mixture and fold it. Take the dough out when a half of flour interblends into the dough.
* Step 5
Put the green Yamaimo mixture into the rest of "jouyo-ko (rice flour)". Mix them. Put the rice flour onto the yamaimo mixture and fold it.

Divide the each dough into 5, as using dusting flour. Extend a green dough into a circle as using dusting flour. Make the center thick. Wrap a bean jam ball with the dough.

* Step 12
Put its eyes with red food coloring which is dissolved in a little water with a little rice flour.
* Step 13
Do the same thing and make another set (a four-leaf clover & a caterpillar). Put them in a steamer and spray water over them.
* Step 15
Then cool them with a cotton clothes cover not to get dry.
