Reduce Salt Intake with Shiitake powder! Chicken Sticks
I made delicious reduced salt chicken sticks with grated dried Shiitake (Shiitake powder), as featured on NHK's TV "Gatten" show!
The guanylic acid uniquely present in dried Shiitake strengthens the Umami taste of other ingredients. So, I tried using them to make chicken sticks, and it turned out so delicious while also reducing the salt level by a third.
A tip to get good caramelization is to cook the skin side first over low heat. I also recommend adding garlic!
