Japanese Egg Sandwich

My late Japanese best friend taught me to make this. She also taught me to make okonomiyaki and kare raisu. Bless her soul. I am feeling a bit sentimental this morning, remembering her, so I made these for my kids.

Cooking instructions

* Step 1

Peel the eggs. Mash with mayo, salt, and black pepper. I just use a regular fork.

* Step 2

Spread evenly on a slice of bread. Cover it with another bread.

* Step 3

You can shape it or just cut them to smaller pieces. Enjoy!
