Creamy Rigatoni
Cooking instructions
* Step 1
Cut asparagus into bite size. Julienne red bell peppers. Slice mushrooms
* Step 2
In a frying pan, heat 1 tsp oil. Cook the minced garlic.
* Step 3
Cook ground beef on medium heat in the same frying pan
* Step 4
Add vegetables and cook together with beef and season to taste with salt and pepper
* Step 6
Begin boiling pasta water and salt water heavily (around 1/4 cup salt)
* Step 7
Throw rigatoni pasta into boiling water. Follow cook time on the back of the package for dry pasta. For rigatoni, typically it is 14 minutes. For fresh pasta, 3-4 minutes.
* Step 8
In a separate frying pan, melt 1 tbsp of butter. Once butter is melted, mix 2 tbsp of flour. Mix well to ensure flour is roasted
* Step 9
Once flour and butter is roasted well, add 1.5 cups of milk. Add milk gradually to ensure flour is mixed properly. Use whisk.
* Step 10
Once all the milk is added and there are no most clumps, add chilli flakes. Add salt, and pepper to taste. This sauce is the white roux.
* Step 11
Add reserved beef and vegetables into white roux. Mix thoroughly so that everything is coated.
* Step 12
2 minutes before the cook time of the pasta, remove 1 cup of the pasta and keep for later. Using a slotted spoon or tongs, remove pasta directly from the water and into the sauce.
* Step 13
Mix throughly ensuring the pasta is well coated with the sauce. Initially, everything will be slightly chunky and thick. Use the reserved pasta water to thin out the sauce to better ensure the sauce coats the pasta.
* Step 14
Keep tasting and season to taste
* Step 15
Add mozzarella. Add as much as you want, depending on how cheesy and stringy you want the pasta to become.
