Vegan Sloppy Joes!

When I moved into my first apartment, I remember making these for a bunch of friends and a neighbor I hadn't met yet knocked on my door. He just wanted to introduce himself and when I answered the door, I offered him a sloppy Joe. He ate it and had NO IDEA it wasn't meat. He was so surprised when I told him and eventually started to consider going vegan (I don't know if he ever actually did, but I can dream!!). This is such a good recipe and more healthy than most others since it has all the veggies in it.

Cooking instructions

* Step 1

Saute the bell peppers, onion, and garlic in olive oil for about 6 minutes (until fragrant)

* Step 2

Add tomato paste and let that cook for another 3 minutes, then add broth, protein crumbles, ketchup, and spices. Let simmer until the broth absorbs nicely

* Step 3

Toast your hamburger buns (or don't)

* Step 4

If you feel like it, add avocado slaw or pickles on top! Enjoy!!
