Ginger Jam For Ginger Tea
I occasionally buy direct-from-the-producer jam. I went to buy some the other day, and they were out of stock, so I asked the lady who makes it for the recipe. From there I adapted it through a lot of trial and error.
Cooking instructions
* Step 1
You can make this with any kind of fresh ginger. I used regular ginger this time.
* Step 2
Wash the ginger well, cut off any bad parts, and weigh. You can leave the skin on.
* Step 3
Chop up finely in a food processor or grate it. If you are grating it, do so in a way that cuts through the fibers.
* Step 4
Put the grated ginger and the same weight in honey, plus the light brown sugar and lemon juice in a pan. Simmer over low heat.
* Step 5
Once it thickens, it's done. If you cook it for too long it won't blend well with milk tea, so it's alright even if it feels a bit liquid. It will thicken a little more when it cools.
* Step 6
I add about 1 teaspoon to a mug of milk tea. Adjust the amount to taste. It's delicious in hot milk too.
