Oysters in oil
A great appetizer as is, cold or warm. This goes so well with sake, shochu or white wine. You can enjoy on top of rice or with pasta as main.
Cooking instructions
* Step 1
Rinse fresh oysters and spread a pinch of salt (extra amount) over. Let them sit for approx.10 mins to remove water.
* Step 2
Place oysters in a medium pan on medium heat, and heat them until cooked. Remove half of extra water using kitchen towel.
* Step 3
Lower heat and add sliced garlic and oyster sauce. Slightly mix and heat for a few minutes until garlic flavor and oyster sauce are blended in.
* Step 4
Put cooked oysters, garlic and liquid into a sterilized jar. Add olive oil until oysters are completely covered. Add a pinch of blue pepper corns.
* Step 5
FYI - Instead of blue pepper, black pepper or pink pepper would also be good substitutes. You could also add chili pepper if you like it hot. (Just a touch. It won’t get too hot, though.)
* Step 6
FYI - I buy these fresh oysters in jars. Available at Japanese supermarkets. I also saw them at Costco.
