Caramelized Carrots

7 net carbs Recipe from Easy Paleo 70 Delicious Recipes **These weren't too bad, just more work. I used pine nuts and almonds instead of hazelnuts and no parsley.

Cooking instructions

* Step 1

Preheat oven to 350°F.

* Step 2

Place nuts on a baking sheet and roast 10-12 min. Remove nuts and set aside to cool.

* Step 3

In same pan, toss carrots with garlic, ginger, paprika, 2 T oil, salt and pepper. Cover pan tightly and roast 30 min. Uncover and roast another 20-25 min, until tender.

* Step 4

Remove carrots from oven and drizzle with 1 tsp oil, tossing well to coat. Transfer to plate and sprinkle with nuts and parsley.
