Sugarfree Tomato Barfi

Cooking instructions
* Step 1
Wash and purée the tomatoes well in a blender without adding any water
* Step 2
Melt ghee in a saucepan and pour in the tomato purée
* Step 3
Stir for 4-5 minutes on medium heat
* Step 4
Add finely grated coconut and mix well
* Step 5
Keep stirring until the mix comes together
* Step 6
Then add the mava after crumbling or mashing it a bit
* Step 7
Mix well. The mix will be slightly liquidy after adding mava
* Step 8
Mix and keep stirring till the mixture thickens to halwa/any barfi mix consistency
* Step 10
Grease a tray or plate with ghee and spread the mixture evenly starting with one corner
* Step 11
Sprinkle slivered pistachios and vark (optional)
* Step 12
Let cool and cut into desired shaped pieces
* Step 13
Refrigerate the leftovers air tight
* Step 14
Tip: It wouldn’t taste of tomatoes!! Enjoy!
