Quinoa Stir Fry
Fried rice is our best take away recipes from the Chinese cuisine gallery. It’s also open to a lot of variations, so we make it at home very easily and the way we want to. So here’s a healthy version of our favourite comfort food, minus the rice! Have it for breakfast, lunch or dinner, it’s always easy-peasy to prepare and vanishes in a jiffy!

Cooking instructions
* Step 1
Rise quinoa in a fine colander well and bring 2 cups of water to boil in a sauce pan
* Step 2
Add the quinoa in the boiling water along with 1 ts oil and a pinch of salt and let to boil
* Step 3
Once boiled for 2 minutes, reduce heat and cook covered for 10-12 minutes till the water is completely absorbed by the quinoa
* Step 4
In another saucepan boil veggies like sweet corn and green peas using a cup of water for 5-7 minutes and strain the water and keep aside
* Step 5
Once the quinoa is cooked, take off heat keep aside
* Step 6
Heat a Tb of oil in a non stick pan
* Step 7
Add onions, chopped garlic and sauté for 2 minutes on medium heat
* Step 8
Add the other veggies like beans, cabbage, carrots, boiled sweet corn and peas and sauté for 5-7 minutes more
* Step 9
Reduce heat and add the quinoa and mix well
* Step 10
Add salt to taste, pepper powder and soy sauce and mix well
* Step 11
Cover and cook for 2 minutes more on Low heat and then take off heat
* Step 12
Serve hot with hot garlic sauce or any sauces of your choice
* Step 13
Tip: adding oil while boiling quinoa helps to avoid them getting stuck to the saucepan after they are cooked
* Step 14
Tip: Add scrambled eggs or boiled chicken/any meat of your choice for a non- vegetarian variation of this recipe
