Cooking instructions
* Step 1
Firstly, to prepare the “Undhiyu Special Masala”: In a pan, add all the ingredients mentioned above under the heading “For Undhiyu Special Masala (To Dry Roast)” and dry roast on low flame until aromatic. Set it aside to cool. Transfer the roasted spice mix to a mixie grinder.
* Step 2
Then add all the ingredients mentioned under the heading “ Other Ingredients: (To be added) and grind it to a fine powder. (Alternatively, you can first grind all the roasted spices. Then add the remaining powders and grind it together). It will yield 100 gms Undhiyu Special Masala. Transfer this masala into an airtight container. It stays good for a year.
* Step 3
Homemade Undhiyu Special Masala is ready.
* Step 4
For preparing the muthiya, in a large mixing bowl, add all the ingredients mentioned under the heading “For the Muthiya “. Mix it well and form it into a dough. Add water, if required. Add little oil and knead it again. Apply oil on your palms and form into flat or round muthiyas of medium size. Set it aside.
* Step 9
For cooking the Lilva beans and muthiyas together, heat oil in a pressure cooker. Add turmeric powder and asafoetida and mix it well. Add the lilva beans and salt and saute it well. Add water. When the water boils, add the prepared muthiyas. Reduce the flame to low and gently mix it well. Cover with the lid and pressure cook for 2 whistles on high flame. When the steam is released remove the lid and set it aside.
* Step 13
To make the green masala paste for the gravy, in a blender add all the ingredients mentioned under the heading “For Green Masala Paste” and blend it into a smooth paste adding very little water. In the same blender, add the chopped tomatoes and blend into a puree. Assemble all the ingredients required to make “Lilva Beans-Muthiya nu shake.
* Step 14
Heat oil in a large kadai. Add the cumin seeds and mustard seeds and allow it to splutter. Add the asafoetida and mix it.
* Step 15
Add the green masala paste and saute it for few minutes. Add the turmeric powder and mix it well.
* Step 16
Add the tomato puree and cook till oil appears at the surface.
* Step 17
Add the kasuri methi and saute for few minutes.
* Step 18
Add all the spice powders ie. Coriander-cumin powder, red chilli powder, homemade undhiyu special masala, kitchen king masala, sugar and salt. Mix well and saute on low flame till the masala is cooked well.
* Step 19
Add a cup of water and cover and cook till oil appears at the surface.
* Step 20
Add the cooked lilva beans-muthiya mix and mix it well. Cover and cook on low flame for few minutes.
* Step 21
Garnish it with lemon juice, butter, green garlic and coriander leaves.
* Step 22
Delicious Lilva Beans-Muthiya nu shake is ready. Serve it hot with roti, Paratha etc.
