Cooking instructions
* Step 1
Soak sabudana for 5 to 6 hours or overnight in water just above the surface of sabudana.
* Step 2
Drain the water after soaking. Sabudana would have fluffed up and must be soft when squished.
* Step 3
Wash the potatoes nicely. Steam it. Remove the skin and mash the boiled potatoes.
* Step 4
Roast the peanuts. In a chopper, add the roasted peanuts, ginger, chillies, coriander leaves and cumin seeds.
* Step 5
In a large mixing bowl, add sabudana, mashed potatoes, chopped ingredients, salt and lemon juice. Mix everything together.
* Step 6
Now using your hand, form flat patties or vadas.
* Step 7
In a cooking pan, heat oil to medium heat. Drop the vadas one by one so that they become dark golden brown on the outside and cooked inside.
* Step 8
It takes about 5 to 7 minutes for one batch of 4 vadas.
* Step 9
Drain them on absorbent paper and Serve hot with coriander pudina chutney.
