Cook the tocino by heating 3 tablespoons of cooking oil in a pan. Adjust your stove between low to medium heat setting. Fry both sides of Pork Tocino until it browns (note: no need to boil). Remove the tocino from the pan. Slice it into serving pieces. Set aside

Make the scrambled eggs by combining eggs and fresh milk. Beat until the mixture smoothens. Heat a pan and melt the butter. Once the butter gets hot enough, pour the egg mixture and stir constantly while cooking. Once the texture becomes less runny, add 2 tablespoons of shredded cheddar cheese, and then stir. Transfer to a clean plate. Set aside.

Make garlic rice by adding oil to a pan then cook garlic for one minute then add the cooked rice. Cook for 5 minutes then set aside.

* Step 1

In a pot over medium heat, saute the onions until translucent, about 2-3 minutes. Then add in the garlic and ginger, and continue to saute for another 2-3 minutes until fragrant.

Add in the rinsed rice and 3 cups of stock. Season with black pepper and fish sauce. Stir to combine.

Bring to a boil, then simmer with a lid for 30 minutes on medium-low, stirring occasionally to prevent the bottom from sticking/burning.

After 30 minutes, pour in the remaining 1 cup of stock. Stir to combine and season with more salt or pepper to taste, if needed. Add additional stock or water to achieve your desired porridge consistency.

I don't like Omelettes. This will be as close to one I will eat. I have found no restaurants that will put what I would even begin to like in an Omelette. I have seen everything from rice to pulled pork, from veggies to macaroni and cheese. I will eat eggs with bacon, sausage, cheese, ham, spices, herbs, hot sauce, but not all together. I guess I am just picky. However I have cooked eggs many ways for others, and will continue to do so.

Toast the bread. Dice the tomatoes, melt the butter, Sauté the tomatoes in the butter. Season with salt and pepper. Add mayonnaise, ketchup, and mustard to the toasted bread. Add the eggs to the tomatoes and scramble them till done.

Add the cheese and allow to melt. Divide the eggs between two of the slices of the toasted bread. Add pickles on top of one of the stacked eggs. Stack the sandwich, cut it in half, and serve. I hope you enjoy!!!

Start by assembling ingredients. Heat up a non stick pan with 3 tbsp of oil.

As the pan is heating up, wash and peal the potatoes, and cut them into 1/4 inch thick pieces.

Add the spices and mix well.

Once the oil is ready, pour in the potatoes and incorporate them into the oil by mixing them well. Cover them and cook them for 10 minutes, over low heat and stirring often.

Once the 10 min have passed, uncover them and increase the heat. Cook them for 7-10 more minutes or until golden brown, stirring them occasionally.

Transferred them to a colander or plate lined with paper towels to absorb the access oil. Serve them warm with a side of ketchup. Yum !
