#win #week9 Winter special matar mushroom masala curry 🍛 A creamy and spicy curry or north indian gravy prepared mainly with green peas and mushrooms. the curry gets its flavour and richness from its tomato and onion based sauce tossed in a cashew paste. it is an ideal side dish to roti / chaptai and jeera rice or plain steamed rice.

* Step 1

Firstly, in a large kadai heat 2 tsp oil and saute 1 onion, 1 tbsp ginger-garlic. also saute 2 tomato till they turn soft and mushy.

Allow the mixture to cool completely and transfer to the blender. blend to smooth paste without adding any water. keep aside.

Now heat 2 tsp oil and saute 10 mushroom, ½ tsp pepper and ½ tsp salt. saute for 2 minutes or till mushrooms changes colour.

Do not break mushrooms, remove gently and keep aside

In the same kadai heat 2 tsp oil and saute 1 bay leaf, 1 inch cinnamon, 1 tsp cumin. saute till the spices turn aromatic.

Keeping the flame on low saute, ½ tsp turmeric, 1 tsp chilli powder and ¾ tsp coriander powder.

Add in prepared onion tomato paste and cook well. keep stirring till the onion tomato paste thickens and releases oil. now add in ¼ cup cashew paste and mix well. add in 1 cup water and stir well adjusting consistency as required. further add ½ cup peas and sauted mushrooms.

* Step 8

Mix well. cover and boil for 5 minutes or till mushrooms and peas gets cooked completely. now add 1 tsp kasuri methi, 2 tbsp coriander leaves and ¼ tsp garam masala. mix well.

Finally, serve matar mushroom masala with roti, naan or kulcha.

* Step 1

For kofta preparation: firstly, peel and grate lauki. add salt squeeze well. also add in besan and spices. mix well and prepare kofta. coat with corn flour and deep fry. drain and keep aside.

Lauki kofta curry:- firstly, heat oil and add in cumin and bay leaf. further add turmeric and chilli powder. add in prepared onion tomato paste and saute well.

Additionally, add in coriander powder and salt. add in leftover lauki water and curd. mix well and boil.

Add kasuri methi and garam masala powder. transfer the gravy to a serving bowl and place lauki. finally, garnish with coriander and serve lauki kofta curry with roti.

* Step 1

Firstly, in a large kadai heat 1 tbsp butter and add 3 tomato, ¼ cup peas,½ capsicum, 2 boiled potato and ½ tsp salt. saute for 2 minutes. also, add ½ cup water and mix well. cover and boil for 10 minutes. mash the vegetables smoothly making sure there are no lumps.

Now add 1 tsp chilli powder, ¼ tsp turmeric, 1 tsp pav bhaji masala, 1 tsp kasuri methi and 2 tbsp coriander leaves.

* Step 3

Saute for a minute making sure the spices are cooked well. Stick the prepared vegetable mixture to sides of the pan and create space at the centre of kadai.

* Step 4

Heat a tbsp of butter and add 1/4 tsp chilli powder,1/2 tsp pav bhaji masala,1 tsp kasuri methi

Also add 1 tbsp coriander leaves,1 tsp ginger garlic paste,1 onion and 1/2 lemon juice.

Saute well making sure the onions are cooked well

Now add three drops of red food colour and mix well. feather add half cup of water or as required adjusting consistency

Boil and mash for 5 minutes or till pav bhaji turns smooth and silky in texture.

Now prepare the pav by heating half tsp butter and add A pinch of chili powder pav bhaji masala and 1 tbsp coriander leaves mix well

Now slit 2 pav in centre and roast with spiced butter

Roast both sides of pav till they turn slightly warm

Finally and pav and bhaji as pav bhaji with some chopped onion, coriander, lemon and dollop of butter. yummy and tasty pav bhaji my kids favourite

In a pan, add oil and fry the onion till translucent.

Throw in the chicken preferably with bones and diced bottle gourd / lauki, and ginger garlic paste bhonify until rawness gone (You can alternatively cook it in a pressure cooker to save time. Just 1 or 2 whistles of the pressure cooker will be sufficient to cook the bottle gourd thoroughly)

* Step 3

Now add the green chili, tomato, salt, turmeric powder, red chili powder Coriander powder and water and cook till the tomato pieces are tender.

* Step 4

Add a cup of water, coconut paste, (optional) and coriander leaves, cook on low flame till oil begins to float on top. Serve hot with steamed plain rice or chapaties
