#jan #week2 sweet pongal or chakkara pongal is especially prepared during the celebration of sankranti festival and served as prasadam in many south indian temples.... popular sweetened rice based dish from south india which is also hugely popular in srilanka and thailand especially with the tamil community. there are several names across south india and it is also known as huggi in kannada or in karnataka. the dish is specifically made during the pongal festival with moong dal, jaggery and rice with freshly harvested grains....

Ingredient

1/4 cup

water

ghee

Cooking instructions

* Step 1

Firstly, in a pressure cooker take ½ cup rice and ¼ cup moong dal (both soaked for 15 minutes) add in 2¼ cup water and pressure cook for 4-5 whistles.

* Step 2

Make sure the dal and rice is cooked completely. further in a pan take ¾ cup jaggery and ¼ cup water.

Keep stirring till the jaggery melts completely. now filter the jaggery water into cooked rice-dal mixture.

* Step 4

Add ¼ cup water or more adjusting consistency as required. simmer for 2 minutes or till jaggery combines well with rice-dal mixture.

Add in 2 tbsp ghee and give a good mix till the sakkarai pongal turns glossy. now in a small kadai heat 2 tsp ghee and fry 10 whole cashew, 2 tbsp raisins and 1 clove.

Pour the fried cashews and kishmish into sweet pongal. also add ¼ tsp cardamom powder and small piece edible camphor. mix well.

Finally, sweet pongal / sakkarai pongal is ready to offer to goddess.

palak (boiled)

Cooking instructions

* Step 1

Firstly, in a large kadai heat 2 tbsp butter and add vegetables. cook and mash well. now add 1 tsp chilli powder, ¼ tsp turmeric, 1/2 tsp coriander powder 2 tsp pav bhaji masala, 1 tsp kasuri methi and coriander leaves.

* Step 2

Heat a tbsp of butter and add ¼ tsp chilli powder, pav bhaji masala, 1 tsp kasuri methi.

* Step 3

Also add 1 tbsp coriander leaves, 1 tsp ginger garlic, ginger paste, 1 onion and 1 lemon juice. saute well.

* Step 4

Boil and mash for 5 minutes adjusting consistency. finally, serve pav and bhaji as pav bhaji.

* Step 1

Firstly, in a large kadai heat 1 tbsp butter and add 3 tomato, ¼ cup peas,½ capsicum, 2 boiled potato and ½ tsp salt. saute for 2 minutes. also, add ½ cup water and mix well. cover and boil for 10 minutes. mash the vegetables smoothly making sure there are no lumps.

Now add 1 tsp chilli powder, ¼ tsp turmeric, 1 tsp pav bhaji masala, 1 tsp kasuri methi and 2 tbsp coriander leaves.

* Step 3

Saute for a minute making sure the spices are cooked well. Stick the prepared vegetable mixture to sides of the pan and create space at the centre of kadai.

* Step 4

Heat a tbsp of butter and add 1/4 tsp chilli powder,1/2 tsp pav bhaji masala,1 tsp kasuri methi

Also add 1 tbsp coriander leaves,1 tsp ginger garlic paste,1 onion and 1/2 lemon juice.

* Step 6

Saute well making sure the onions are cooked well

* Step 7

Now add three drops of red food colour and mix well. feather add half cup of water or as required adjusting consistency

* Step 8

Boil and mash for 5 minutes or till pav bhaji turns smooth and silky in texture.

Now prepare the pav by heating half tsp butter and add A pinch of chili powder pav bhaji masala and 1 tbsp coriander leaves mix well

* Step 10

Now slit 2 pav in centre and roast with spiced butter

Roast both sides of pav till they turn slightly warm

* Step 12

Finally and pav and bhaji as pav bhaji with some chopped onion, coriander, lemon and dollop of butter. yummy and tasty pav bhaji my kids favourite

* Step 1

In a blender jar put all the ingredients as mentioned for curd mixture. Blend to get a homogeneous curd mixture. Keep it aside.

Side by side boil drumsticks in water with salt and turmeric powder. Strain and keep aside. Next heat a kadhai with oil. Splutter fenugreek seeds, mustard seeds and cumin seeds. Add dry red chillies and grated ginger.

Next add ginger garlic paste, little salt and turmeric powder. Put curry leaves and hing. Mix and cook for some time. Next add the boiled drumsticks.

Mix and cook for some time till drumsticks combines well with the tempering. Next add little water so as to reduce the temperature. This helps to prevent curdling of the curd mixture. Now add the prepared curd mixture and continuously keep stirring. Check the seasonings. Adjust as needed. Adjust the consistency by adding water.

As you get one or two boils in medium heat. Switch the flame off. Let it settle down for some time before serving.

Before serving garnish with freshly chopped coriander leaves. Serve with rice... Enjoy...

* Step 1

In a vessel put grated coconut, curd, salt, sugar and very finely chopped green chillies. Mix. Add water as per your preferred consistency. Mix all ingredients together nicely. Next heat a tadka pan with oil. Splutter mustard seeds and cumin seeds. Add urad dal, dry red chilli, curry leaves and hing. Mix. Add this tadka into coconut curd mixture. Give a nice gentle mix. Coconut chutney is ready!!
