This is a delicious soup recipe with carrots and tomato. This soup has the goodness of cooked rice water which makes the soup thick. Rice water has its own benefits so sometimes use it in various dishes. Do try this recipe! #soup #winter #carrot #tomato #PC

* Step 1

Heat a pan. Add butter. As it melts, add finely chopped garlic cloves. Saute for a minute but it should not change colour. Next add onion slices. Saute all together. Next add carrot dices. Add salt and pepper. Mix. Now cover and cook.

* Step 2

As carrot are almost cooked, add chopped tomatoes and fresh green chillies. Mix well. Cover and continue cooking. As tomatoes become mushy, add mint leaves. Mix well and switch off and wait for it to cool down.

* Step 3

After cooling, grind the soup mixture by adding cooked rice water, into a smooth consistency. Rice water helps in thickening of the soup. Strain and collect the filtrate.

* Step 4

Now in a pan put this filtrate. Adjust consistency by adding water. As it comes to a boil, add sugar and check the other seasonings. Add as needed. Finally add mixed herbs and give a nice gentle mix. Switch off the heat. It's ready! Pour the soup into soup bowls. Serve hot and enjoy! Nb: I like to put roasted cumin for garnish but you can avoid it. Also in case you want to avoid cooked rice water then you can substitute cooked rice water with cornflour for thickening the soup

In a mixing bowl take small chopped onion and tomato. Add some mixed herbs and chilli flakes. Mash mix. Keep aside.

Now in another mixing bowl mix curd and cheese spread nicely, till both are mixed well. Add chilli flakes, mixed herbs, chopped coriander leaves, black pepper powder. Mix well. Curd mixture is ready. Just a little time before serving add salt and black salt. Mix well. Don't add salt before hand as the veggies will ooze water and the raita consistency will not be creamy.

Now into the curd mixture add the prepared onion and tomato. Mix. Creamy raita is ready!

Transfer into a dish. Garnish with roasted cumin and red chilli powder. Serve with fried rice/ biryani and enjoy!

* Step 1

Char the eggplant and tomato. Make a slit on the eggplant. Put garlic cloves in it. Brush oil. Next take a tomato make slight slits. Brush oil on it too.

Char nicely. Let it cool down. After it cools, remove the skin.
