* Step 1

In a mixing bowl put besan, rice flour, cornflour. Put all the mentioned dry masala. Mix well.

* Step 2

Add water gradually. Make a lump free batter. Add hot oil. Whip mix very nicely, you won't need any soda. Keep this batter aside. Now heat oil for frying the pakora. As the oil is heated, dip the palak leaves into the batter.

Fry till crispy and golden brown in medium to high heat. Remove from oil, drain extra oil. Serve hot with imli chutney and cup of hot chai

* Step 1

Steam the small chopped carrots (add little salt), till it's cooked yet crunchy. Keep it aside.

Heat oil. Splutter mustard seeds, cumin seeds. Add dry red chillies, curry leaves, gota urad dal and pounded garlic. As garlic becomes little brownish, add the steamed carrots

Add salt, turmeric powder and red chilli powder. Stir fry for some time.

Now add in freshly grated coconut. Mix well. Finally add a dash of garam masala. Mix well. it's ready to serve!

* Step 1

In a microwave safe bowl put the pigeon peas. Add water and salt. Microwave for 6 minutes. Check if it's softened, else again microwave for 2-3 minutes or until done. As it's done, strain and remove the pigeon peas and keep aside.

Next heat oil in a kadhai. Splutter mustard seeds and cumin seeds. Add red chilli, fresh green chillies, curry leaves and chopped onion. Saute till onion is brownish. Now add in the cooked pigeon peas.

Add salt as needed, turmeric powder and garam masala. Stir fry at medium heat. Next add kasuri methi. Give a nice mix. Finally add red chilli powder and mix again. Stir fry for a minute or two. It's ready!!

* Step 1

In a mixing bowl, put grated boiled potatoes, minced nutrella, grated paneer, ginger- garlic and green chillies paste, salt, turmeric powder, red chilli powder, garam masala and chopped coriander leaves.

Mix all above-mentioned ingredients nicely. Then gradually add the prepared fresh bread crumbs and again mix all. You must get a soft dough like mixture. Brush oil on the entire mixture.

Next grease your palms and take small portions from the prepared mixture. Make small tikkis. You can give them any shape you like. Keep these tikkis in fridge for 15 minutes. Side by side heat oil for shallow frying. Take out the tikkis from the fridge and shallow fry them at medium heat. Turn and fry from all sides till it's crispy and golden brown in colour. Drain the oil. It's ready!!

8-10 tbsp

jaggery powder

as per your taste

water

1/2 tsp

cumin seeds

1/2 tsp

fennel seeds

4-5 tbsp

Cooking instructions

* Step 1

Wash and dry the mangoes nicely. Then shred them.

* Step 2

Now take a pan with oil, heat it, add mango shreds, salt and turmeric powder. Cook till they are transparent. Add red chilli powder and mix. Cook for some more time.

* Step 3

Next add jaggery powder and mix. Keep the flame slow and keep on stirring and mixing. Add little little water and mix else it may burn.

* Step 4

As mangoes, jaggery get blended with each other slowly thickening starts.. Let it be in slow flame.

* Step 5

On other side place a tawa, heat it. Dry roast cumin and fennel seeds. Then grind them. Add this powder to the pan chundo.

* Step 6

Mix all well. Switch the flame off. Instant PAN AAM CHUNDO is ready...

* Step 7

Let it cool down. Keep it in a clean airtight container in the refrigerator. Enjoy it with poori/ paratha/ roti/ rice..
