Carrot and tomato Soup

This is a delicious soup recipe with carrots and tomato. This soup has the goodness of cooked rice water which makes the soup thick. Rice water has its own benefits so sometimes use it in various dishes. Do try this recipe! #soup #winter #carrot #tomato #PC

Cooking instructions

* Step 1

Heat a pan. Add butter. As it melts, add finely chopped garlic cloves. Saute for a minute but it should not change colour. Next add onion slices. Saute all together. Next add carrot dices. Add salt and pepper. Mix. Now cover and cook.

* Step 2

As carrot are almost cooked, add chopped tomatoes and fresh green chillies. Mix well. Cover and continue cooking. As tomatoes become mushy, add mint leaves. Mix well and switch off and wait for it to cool down.

* Step 3

After cooling, grind the soup mixture by adding cooked rice water, into a smooth consistency. Rice water helps in thickening of the soup. Strain and collect the filtrate.

* Step 4

Now in a pan put this filtrate. Adjust consistency by adding water. As it comes to a boil, add sugar and check the other seasonings. Add as needed. Finally add mixed herbs and give a nice gentle mix. Switch off the heat. It's ready! Pour the soup into soup bowls. Serve hot and enjoy! Nb: I like to put roasted cumin for garnish but you can avoid it. Also in case you want to avoid cooked rice water then you can substitute cooked rice water with cornflour for thickening the soup
