* Step 1

Wash urad and brown rice nicely. Then soak them in clean water for 4-5 hours. Add fenugreek seeds too.

For grinding, in the jar take soaked urad dal and brown rice. Add water and grind it smooth. Next add quinoa flour. Grind to mix.

Keep it covered in a warm place for natural fermentation. Then add salt and mix. Keep the tawa conditioned. Pour a ladle of batter and spread it into a circular dosa. As it dries up, drizzle oil or ghee. When it's crispy flip and cook the other side. As it done flip again. Now you can serve it with chutney, sambar or even with curry of your choice.

For making chutney Heat a kadhai. Add oil. As it heats up, add coriander seeds, cumin seeds, dry red chillies and ginger.

New add chana dal and fresh curry leaves. Saute for some time. Next add salt and hing. Mix and saute till chana dal is fried.

Let this chutney mixture come to room temperature. Finally add fresh green chilli and a small bunch of coriander leaves and few mint leaves. Grind this by gradually adding water. Transfer the chutney into a serving dish.

For tempering the chutney. Heat oil. Splutter rye. Add curry leaves and dry red chilli. Add the tadka into the chutney. Mix gently.

Check out the link provided above for making idlis. After making the idli batter, temper it with the above-mentioned ingredients. Use a button idli mould to make the cut mini mini sized idlis. As idlis are ready, keep them aside to cool down. As it cools down, demould the idlis.

Next heat a kadhai with oil. Splutter mustard seeds and cumin seeds. Add curry leaves. Put salt, red chilli powder, sambar powder and a dash of hing. Add very little water. Mix the masalas. Keep the heat slow.

* Step 1

Start by soaking urad dal and rice separately in vessels in the afternoon. In the night, wash them nicely. Grind raw rice into a semi smooth texture. Then add in the urad dal. Grind all together to make a smooth batter. Transfer into a large vessel. Cover and keep it for fermentation. In the morning, start by preparing the tomato chutney.

You can make tomato chutney/ tomato- onion chutney/ tomato-carrot chutney etc. Next take out some plain dosa batter in a vessel. Add in the prepared tomato chutney. Give a nice mix. Check the consistency. It must not be runny.

Next heat a conditioned tawa. Pour in ladle full of the tomato chutney batter. Spread into a circle. Let it dry, then brush oil. Let it get nicely roasted. Take out and serve!!

Soak urad dal and idli rava separately in water overnight.

Cover and keep in a warm place for natural fermentation. As batter is fermented,you can see it is fluffy and has bubbles. Add salt and mix. Now, into the batter add grated beetroot and chopped coriander. Mix. Keep the steamer ready. Take an idli stand. Brush ghee into each cavity.

* Step 3

Into each cavity pour idli batter. Put idlis for steaming. Steam the idlis for 12 minutes. Check by poking, if required steam for 2-3 minutes more. Take out, let it cool a bit. Scoop out tasty pink idlis with a spoon. Serve with chutney/ ghooguni.

* Step 1

To make potato masala, heat oil and splutter mustard and cumin seeds.

Add chopped onion, green chili, dry chili, and curry leaves. Saute till onions are soften

Mix chana dal and urad dal and moongfali. Fry and add salt, turmeric powder, and mashed potatoes. Add half a cup of water and cook the potato masala. Now it's ready.

Wash dal and rice many more than once and soak for 4-5 hours. Grind to paste and add the rest of the powered ingredients. Mix well and ferment overnight/for 5-6 hours.

Add salt and sugar to the batter and mix well (after fermentation). Heat a pan/ tawa. Grease with vegetable oil. Then wipe with tissue paper. Sprinkle some water to bring down the temperature of the tawa. Spread a ladle full of batter. Grease the sides of the dosa with oil.

Spread potato masala on the dosa. Serve the healthy and delicious masala dosa with sambar.
