Ingredient

1.5 tbsp

oil

1/2 inch

ginger chopped

* Step 1

Heat a pan with oil. Add whole spices (cumin, cinnamon, cloves, cardamom, Black peppercorns, little javitri) Next add chopped onion. Saute for some time. Next add chopped tomato, fresh green chillies, grated or chopped ginger and garlic cloves. Saute all together till onion are brownish and tomato is mushy. Add almond slivers. Mix. Now let it come to room temperature. Grind it.

Add little little water and grind till you get a smooth paste.

Now add milk cream. Blend again. A smooth silky paste is ready to be used for making gravy. If required strain the paste. Keep aside.

Next take paneer. Cut them into any shape of your choice. Add little salt and toss mix. Now brush the grill pan with oil. Put the paneer pieces and grill them slightly. Switch off and keep aside.

Now heat a kadhai. Put kasuri methi to dry roast. Take out and keep aside. Now add oil in the kadhai. As it heats up, put the prepared masala paste.

Add salt, turmeric powder, red chilli powder and curry powder. Mix and let it cook. As you get a nice aroma and you find the rawness of the masala is lost, add garlic butter cubes. Mix well. Next add water. Cook till you get the required consistency.

Now add the slightly sauteed/ grilled paneer into the prepared gravy. Mix gently. Now crush and add the roasted kasuri methi. Mix.

Now add garam masala. Mix again. After a minute or two, switch off.

* Step 1

In a pressure cooker, put split moong dal. Dry roast it for some time. Take out and wash nicely and strain. Similarly dry roast the rice also for some time. Then wash that too and strain.

* Step 2

Next in the pressure cooker, put ghee. As it melts, put cumin seeds, black peppercorns, fresh green chillies and grated ginger.

* Step 3

Next put the moong dal and raw rice. Add salt to taste. Saute all together for some time. Next add hot water. Give a nice gentle mix.

* Step 4

Put the pressure cooker lid and cook for 3 whistles. Let the pressure release completely. Open the lid. Check the consistency. If needed add some more hot water. Give a nice gentle mix. Transfer into serving dish.

Next prepare for tempering. Heat ghee. Splutter cumin seeds. Add fresh green chillies and curry leaves. Next add cashewnuts. Fry till cashewnuts are brownish. Next add hing and give a nice mix. Switch the heat off. Now put the tadka into the hot pongal. Give a nice gentle mix. Garnish with some fried cashewnuts.

It's ready!! Serve hot with sambar and chutney.. Enjoy this south Indian delicacy..

40 ml

cumin seeds

garam masala

1 tsp

ghee

1/2 tsp

* Step 1

In a blender jar, put pudina leaves, chopped coriander leaves, salt, sugar, cumin seeds, ginger, chillies, lemon juice and little water. Grind smooth. Keep aside.

* Step 2

Place a pressure cooker. Heat it with oil. Put bay leaves, whole spices and cumin seeds. Add fresh green chillies and sliced onions. Saute till onion is brownish. Then add ginger garlic paste. Cook for some time till rawness is lost. Next add chopped carrot and soaked nutrella chunks. Saute all together.

* Step 3

Next add the soaked and strained basmati rice. Add salt and garam masala. Mix all well. Next add the pudina- coriander leaves mixture. Mix all ingredients very well.

* Step 4

Next add the fried cashewnuts and kishmish. Mix it too. Next add hot water. Grate nutmeg. Add ghee. Place the pressure cooker lid. Cook in medium heat for 2 whistles. Switch the flame off and let the rice settle down.

* Step 5

Open the lid and using a fork fluff up the rice. Delicious pudina rice is ready to serve!! Serve with raita and salad...

* Step 1

Heat a kadhai with oil. Splutter mustard seeds, cumin seeds. Add urad dal, chana dal, few curry leaves and fresh green chillies. Add chopped onion. Saute for some time.

* Step 2

Next add oats. Mix. Add hot water. Put salt and sambar powder. Give a nice mix.

* Step 3

As oats is almost cooked, add the sauteed bread pieces. Mix everything nicely. Add water as needed. Cook for some more time. As everything gets combined well with each other, switch the flame off.

* Step 4

Delicious bread and oats upma is ready to serve!!

* Step 1

Heat oil in a kadhai. Splutter whole spices. Add onion and fresh green chillies. Saute till brownish. Put ginger garlic paste and saute till it's rawness is lost.

Next add the button mushroom heads and stalks, salt, turmeric powder and pulao masala. Mix well.

Next add soaked and strained rice.. saute for some time. Be careful else the grains may break.

Transfer the sauteed rice mixture to a pressure cooker having hot water. Let it come to a single boil. Check for salt, if required add. Put the lid and pressure cook for 2 whistles. Let it cool and release pressure.

As rice cools down, fluff up.. and serve with raita and circa pyaz..

This is a very tasty mushroom rice. I generally use sona masuri rice for this dish, as I include this dish, as our regular lunch menu. This dish is easy to make and nutritious too. But if you want to make it for some occasion then certainly use basmati rice and use rice:water in the ratio of 1:2. Garnish with chopped coriander leaves...
