* Step 1

Wash and chop the veggies. Half boil them with salt and turmeric in the microwave. Prepare the mustard masala paste. Fry the lentil bodi

* Step 2

Heat oil, add panch phutan and allow to crackle. Add chopped onion, chopped garlic cloves, chopped onion stalks, and dry chilli. Saute till aromatic.

Mix chopped tomatoes and cook till softened. Add the mustard paste and fry for a few seconds.

Mix the chopped half boiled veggies with the mustard paste. Cook for 1 to 1.5 minutes till they are done. Garnish with fried bodi and serve.

* Step 1

First cook soaked chana dal for a whistle in pressure cooker. Allow to cool. Chop ridge gourd, rounded and half boil them. Mix both dal and turai.

Heat oil. Add whole garam masala, bay leaf and panch phutan and allow to splutter.

* Step 3

Add red chilli and onion and cook till soften. Then mix garlic and ginger and saute till rawness is gone.

* Step 4

Add chopped tomatoes, cumin powder, coriander powder and kashmiri red chilli powder with half a cup of water.

Cook till the mixture thickens and become aromatic. Add chopped coriander leaves.

Mix the boiled dal and turai. Cook 5 minutes till the mixture is cooked. Bring down and add a teaspoon of homemade ghee. The Chana Dal Turai Curry is ready to serve.

* Step 1

Take dal and vegetables turmeric powder and salt, in a pressure cooker. Boil for one whistle. Allow releasing the pressure naturally.

Heat oil in a kadhi. Add panch phutan and allow to splutter. Now add chopped onion and green chili as well as red chili and saute.

When the onion is fried add chopped tomatoes and coconut powder. Cook till they come together.

Add the boiled dal and vegetables. Mix well and allow to boil.

Mix roasted cumin powder, ginger Juliennes, and ghee. Now the delicious Dalma is ready to Serve.

* Step 1

Dry roast the moong dal till ligh brown. In a pressure cookers take the roasted moong dal after washing. Add turmeric, salt and chopped tomatoes. Cook for 1 whistle and release the pressure immediately.

Heat a pan. Add oil and wait till hot. Add ponch phutan and allow to splutter.

Now add dry chilli, chopped onion, garlic cloves, chopped fresh chilli and saute till aromatic and golden brown.

Then add grated ginger and saute for half a minute. Mix the boiled moong dal with tomatoes. Adjust the seasoning and water for gravy.

Garnish with fresh grated coconut, fresh chilli, curry leaves and lemon juice and serve with rice/roti or as soup.

* Step 1

Take the ingredients to make paratha dough. Rest for 15 minutes.

Make balls out of dough, stuf with cauliflower fried rice and then make parathas with roll pin.

Roast both the sides of parathas with oil/ghee nicely.

To make Fried mushrooms, clean, wash and dry mushrooms.

Heat oil on a pot. Add ponch phutan and allow to splutter. Add turmeric to the oil.

* Step 6

Add mushrooms and salt. There will be release of water from mushrooms. Add black pepper powder now and ensure to coat well on mushrooms.

* Step 7

On the curd add salt and roasted cumin powder. Now the platter is ready to serve.
