Cooking instructions

* Step 1

Take bowl. Put chicken. Add all masalas and mix well. Keep it for 30 mins.

Take kadai. Add one teaspoon of oil. Add onions and saute till it turns pink. Now add garlic and ginger and cashews. Saute for 2 to three mins. Add tomatoes and let it cook till it get softens. Add little water. Now let the mixture gets cool down.

Make the paste of the above. Seive the paste. Take pan. Add one tablespoon of oil. Saute the marinated chicken. Cook it till it gets dry.

Take heavy bottomed vessel. Add Butter and one tablespoon of oil. Add whole garam masala. Now add one teaspoon of kashmiri Red chilli powder and saute for 30 secs. Add the paste. Cook for 2 to 3 mins. Add chicken keep stirring otherwise because of cashews it might stick to the bottom. Add coriander powder.

Now cook till oil gets separated. Now add cream, kasuri methi, garam masalas and cook for two mins.

Serve them hot with homemade beans or rotis.

* Step 1

Cut chicken into small desired pieces. I usually make it small as they cook faster.

Add all the ingredients for marination in bowl along with chicken.

For Smoky effect.. burn charcoal till it turns red.. put it on the foil or steel bowl and pour ghee/oil/butter over it. Cover it immediately. Keep for marination for 30 mins to 1 hour.

Take a frying pan. Add Butter. Now put chicken pieces into it and saute on medium flame. Cover for 10 mins and cook till water is evaporated and oil oozes out.

Now serve chicken tikka along with mint chutney and some salad.

* Step 1

Take one pan. Add oil. Put ginger garlic paste and green chilli. Saute it for one min. Add onions to it. Saute them till onions turn transculent.

Now add tomatoes. Saute till it turns mushy. Add paneer to it. Also add all masalas. Mix well. Cook it for 2 or 3 mins. Add coriander leaves.

Arrange bread slices. Put the mixture on one slice and cover with another. Apply Butter on the slices. Heat the tawa or pan. Cook it on medium flame till golden brown. Flip the side. Make all the sandwiches in same manner. You can grill them too.

2 tablespoon

ghee

Cooking instructions

* Step 1

Take one pan add tomatoes, onions, ginger, garlic green chillies, kashmiri Red chilli powder and cashews. Add one glass of water and cook for 15 to 20 mins till tomatoes become mushy..

Let this cool down and grind it in mixer to make smooth paste. Now strain the mixture.

Now take heavy bottomed vessel. Add ghee and oil together. Add whole garam masalas. Add smooth gravy into it. Add all masalas like haldi powder and coriander powder. Cook for few mins.

Now add paneer into it. Also add garam masala and kasuri methi. Cook for 5 mins and add cream to it to give creamy texture. Also add cashews into it.

Punjabi Dum Aloo- popular North Indian curry made with baby potatoes! ”Dum” refers to dum cooking in Indian cuisine where dishes are cooked on low heat or by sealing the pot. Dum cooking enhances the flavor of the dish. Cooked with spices, rich gravy of cashews or yoghurt this curry is so flavorful and goes well with rice, Naan or Paratha.

* Step 1

Wash peel potatoes. Prick the potatoes with Fork so that masalas get incorporated well with it.

Take a pan. Put oil and fry potatoes on medium flame so that it cooks well. Add little salt to it. Fry till golden brown.

Now in same oil add onions and saute till transculent. Add garlic,ginger and cashews saute again. Now add tomatoes and cook till tomatoes turn mushy. To it add one teaspoon of Kashmiri Red chilly powder.

Let it get cool down. Now grind this in mixer to form smooth paste.

In same pan. Add little oil. Add while garam masala. When aroma is released Add onion and tomato paste. Saute well. To it add kashmiri Red chilly powder and Haldi. Saute continously well. So that it doesn't stick to the pan. Saute till it releases oil.

Now add little water to it and let it cook. After 5 mins add potatoes to it. Also add coriander powder and garam masala.

Now it's time to add potatoes. Now cover and cook for 5 more mins so that masalas and potatoes get incorporated well. Add kasuri methi too.

Now your Dum Aloo is cooked and ready to be served. U can serve with naans, parathas or rice. I have served it with Lacha Parathas.
