I have made these flower shaped mathris for a giving a fun touch to regular mathri! Easy and tasty! Enjoy!

Ingredient

1 cup

Maida

1/4 cup

Fine sooji

1/4 cup

Hot ghee

1 tsp

Ajwain

to taste

Salt

as required

Water to mix

as required

Oil to fry

Cooking instructions

* Step 1

First, mix maida and suji in a bowl. Add the spices and seasonings.

Then add the ghee and rub very well. Now add water in small batches to make a medium tight dough. Cover with wrap and refrigerate for an hour.

Now remove and thaw for 10 minutes. Then knead again. Keep the oil to heat.

Then roll out a ball sized portion. Cut into rounds with a cookie cutter. Then place a small bottle cap in centre and make small insertions from edge to the cap without cutting all the way to centre.

Make sure that you cut in even numbers. Then lift up the portion between 2 cuts and twist to give a nice flower petal shape.

Similarly make petals of remaining portions. Press the ends well. Then give a small line of chosen food colour with a wooden stick.

Similarly make all the flowers. Then slightly moisten the centre and press kalonji seeds for effect.

Then fry these mathris in low medium hot oil. Do not increase the flame. Fry till pink from both sides.

Remove on tissue paper to drain. Then store in airtight container and enjoy for 2 weeks. Happy Diwali!

Ingredient

1/2 cup

milk

2 tbsp

ghee

Cooking instructions

* Step 1

Heat ghee in a pan,add milk.Heat till boil.

* Step 2

Lower the flame.Add milk powder portion by portion,stirring contineously to avoid lumping.

* Step 3

Stir well and cook till mixture starts leaving the surface of pan.

* Step 4

Add sugar powder and coconut powder.Mix well.Add food colour and mix well.

* Step 5

Put off flame,add kewra water Mix and leave for 5 minutes.

* Step 6

Now mixture is a little cool,make laddus.It will yield 12-15laddus depending on the size of laddus you are making.

* Step 7

Coat the laddus with dessicated coconut.

* Step 8

Mawa-coconut laddus are ready to serve.

baking soda

* Step 1

In a bowl whisk together whole wheat flour, baking soda, baking powder, and cardamom powder. Keep aside. Add butter and brown sugar and whishk it till fluffy and smooth. Now add dry ingredients into it and mix it well.

Add cold milk to the mixture. Knead lightly to form a dough. Do not over knead. Dust some flour on the countertop.Using a rolling pin roll out the dough to 1/4 inch thickness. Using a cookie cutter cut out the cookies in square shape.Roll again the remaining dough and cut out the square shape cookies. Arrange the biscuits on a prepared baking tray. Bake them in a preheated oven at 160°C for 20-25 minutes or till they are light brown in color. Let them cool on a wire rack.

Now we gonna make Royal Icing. For that add icing sugar in a bowl then add all ingredients of Royal Icing section one by one and mix it calmly. If you feel your icing is more thick add little more corn syrup in it and mix it well. Make sure that it's not too runny.

Separate the icing in different bowl add your choice of color in it and then pour it into a piping bag and tie a knot on the edge of piping bag.

Then decorate your biscuits and cookies of your choice. Allow to set Royal Icing for an hour.

After that store in airtight cookie tins as it is or serve it. Enjoy!

4 . Pineapple Cake

165 gm

flour

1/4 tsp

baking soda

60 ml

yogurt

60 ml

oil

80 ml

water

2 tbsp

milk

Cooking instructions

* Step 1

In a bowl mix the dry ingredients.

* Step 2

In another bowl mix wet ingredients properly. Add the dry ingredients to the wet ones and rwo batches. Add milk if the better is too thick

* Step 3

Pour the cake batter in the tin and bake in preheated oven at 170° for around 30-40 minutes.

* Step 4

Once the cake is out of the oven cool it for 5-7 minutes after the unmould the cake from cake tin. Now allow to cool completely.

* Step 5

Once the cake is cool cut the cakes into halves from the middle and keep the top layer aside.

* Step 6

Apply the pineapple juice till the cake is soaked. Now apply the whipped cream to the base and top with chopped pineapple. Take more cream and spread it on the chopped pineapple.

* Step 7

Now apply the top layer of cake and again apply the juice the canned pineapple. Cover the cake with the layer of whipped cream.

* Step 8

Refrigerate the cake for 15-20 minutes. Now apply the design of your choice and on top place the heart shape chocolate. Your pineapple cake is ready.

Peel off watermelon, cut the middle portion (between red and green) into small pieces.

* Step 2

Take a karahi add water and sugar,make a solution, when it becomes half, off the flame and add pieces in it for 1 day with 2 drops of food colour, vanilla essence.

* Step 3

After that strain water and dry it under the fan.
