They are so flavouful, crunchy, crispyand can be prepared ahead. They can be just roasted on time and can be enjoyed at any meal. Cauliflower is full of vitamins B,C and K along with antioxidants, immunity boosters and fiber. Enjoy this healthy meal.

Ingredient

1 cup

Besan

1 tablespoon

Ginger garlic paste

1/2 tsp

Sesame seeds

1/4 cup

Yoghurt

Cooking instructions

* Step 1

First, mix cauliflower, chillies onions and salt in a bowl.

* Step 2

Then heat a pan. Add 2 tsp oil. Then add cumin seeds and allow them to splutter.

* Step 3

Then add ginger and garlic paste and all the vegetable mixed previously.

* Step 4

Saute' well till all the water is released and soaked. Add mashed potatoes, spices to taste and mix well. Then remove from fire and cool.

* Step 5

Mix all the flours, spices, salt, yoghurt, and a tsp of oil. Mix well. Then add the mixture of vegetables.

* Step 6

Combine to form a pliable dough. Keep covered for 10 minutes.

Then heat a tawa. Roll out ball sized portions of the dough into Parathas or thick discs.

* Step 8

Roast on tawa on medium flame using just a small amount of oil for each. Make all the Parathas in similar way.

* Step 9

Serve piping hot with your favourite accompaniment. Enjoy!

Olive oil

Cream cheese

2 tablespoons

Tomato puree

1 tablespoon

Tomato sauce

* Step 1

First, to prepare the filling, heat 1 tablespoon olive oil in the pan. Add onions and saute well. Add garlic paste and cook till aromatic. (I have used boiled peas instead of rajma)

Now, add tomato puree, sauces, herbs and all the seasonings and mix. Cook well till oil separates. Sprinkle some water if needed.

Then add the potatoes, cooked beans and mix well. Cover and cook for 5 minutes.

Apply olive oil on one side of each bread slice. Apply cream cheese on both the sides. Place a spoonful of filling in the centre. Press a little. Cover with another slice.

Grill on hot tawa / skillet /pan or sandwich maker till crisp on both sides.

There are numerous ways to include them in your diet. Its important to soak them or roast them before consumption as it helps in digestion. Try out this raitha made with chia seeds, curd , herbs and spices

Ingredient

1 tbsp

Chia seeds

1 cup

Curd

1 tsp

Cumin

1 tsp

Ghee

1/4 tsp

* Step 1

First, rinse the chia seeds under tap on a strainer lined with muslin cloth. Then pat them dry.

* Step 2

Now add them to curd. Add salt, sugar, Chilli powder, turmeric powder, and stir well. Cover and soak this in refrigerator for 2 to 3 hours.

* Step 3

Now the mixture would have swelled up. If it appears thick, add some buttermilk. Then make a tadka for the raitha or Koshimbir in Marathi.

* Step 4

Heat ghee, pop up mustard and cumin. Add onion, chilies, hing, turmeric powder and saute' well.

* Step 5

Add to the raita and mix well. Then adjust the spices as per taste. Garnish with coriander leaves and serve delicious and healthy Chia seeds Raita with your favourite meal and enjoy!

Made from a watery thin batter and quickly cooked, it is healthy and easy to digest for all ages as it has just rice and coconut. Here I have prepared a different version of Neer Dosa called Kothu Neer Dosa. After preparing, the Dosa is chopped in pieces and tempered with spices. Served with red and green chutney. Enjoy.

Ingredient

1 tsp

oil

1 tablespoon

Fresh grated coconut

1 tsp

Chana dal

2 pinch

Hing

2 tablespoons

Idli chutney powder

1 tablespoon

* Step 1

First, let's make Neer dosas. Grind the soaked and drained rice, Coconut, salt and oil until you get a smooth and paste. Then add water and make a watery paste. Take out in a bowl and add extra water to make running consistency.

Heat a Dosa tawa. Grease with oil and wipe with a cloth. Pour 2 laddlefulls of batter and swirl the tawa. Do not touch the batter with spoon as it will break the air bubble net pattern.

* Step 3

Pour spoonfull of oil all on sides and cook on medium high flame. Then gently remove from sides. It will come off easily when cooked at base. Remove in a plate. Make similar dosas of remaining batter.

Then cool the dosa for 10 minutes. Then cut in small pieces or (Kothu).

Then heat the same tawa. Add 1 tsp oil. Add mustard, chana dal and cashews. Onece they pop up, add rest of the ingredients.

Add chopped onions, green chillies and fry well. Then add tomatoes and saute' well to allow them to cook.

* Step 7

Once tomatoes and carrots are cooked, add Chutney powder, salt and mix well. Add chopped neer dosa and toss well. After they are mixed well, remove from flame, switch off and serve immediately. Sprinkle more dry chutney powder on top. Enjoy hot Kothu Neer Dosa with red Tomato chutney and green coriander and mint chutney.

* Step 1

Keep the required ingredients ready. Crush corns. Mix maida, corn flour, pinch of salt, red chilli powder with little water to make thick batter. Dip corn and deep fry in the oil on sim heat till they become crispy. Heat oil in Kadhai saute chopped onion, tomato, ginger-garlic, pepper powder, add fried corn pieces with salt, soya sauce, ketchup and coriander- mix well. Now BABYCORN MANCHURIAN IS READY.

Mix chopped onion, tomato, carrot, coriander, ground nuts, sweet chutney, green chutney, mixture and salt in a bowl. Now BHEL MASALA IS READY.

Take puffed rice/murmura add bhel masala to it. Now Bhelpuri is ready. Add sev mixture and baby corn Manchurian-mix well. MANCHURIAN BHEL IS READY. Transfer to serving glass.
