Ingredient

2 cups

wheat flour

1 tsp

salt

Cooking instructions

* Step 1

In a mixing bowl take wheat flour, add salt mix and add 1tbsp oil.add green chillies,onion sliced and coriander leaves. Mix all together.

* Step 2

Add dal, mix and Knead it for 4-5 minutes.make a soft dough.

* Step 3

Make medium size balls from the dough.take one ball and cover up the remaining. Dust some flour on roll8ng board then Roll it in round shape. Heat a tawa place this paratha on heated tawa cook from one side for few seconds then flip it.

Apply some oil.both side and fry untill it looks golden. Prepare all parathas and served with any pickles.

* Step 1

Wash and dry the bhindi then cut into small pieces as shown in pic.heat oil in a kadhai add sliced onion.

When onion turn golden brown add chopped bhindi. Mix gently and cook on high flame for 2 minutes then turn the flame medium.

Cook uncovered on medium flame for 7-8 minutes or until bhindi has softened. then add salt and red Chilli powder. Mix and cook on high flame for 4-5 minutes. Now oil comes on the sides and Bhindi cook well.turn off the flame. Serve it with paratha or roti.

* Step 1

Discard the seeds and wash the pumpkin.then chopped it into small pieces. Cut the onion into thin slices.

Take a kadhai add oil.when oil heated add onion slices and saute until they turn crisp and golden brown.transfer half onion in a plate on absorbing paper.

Add chopped pumpkin, mix it.cover and cook on low to medium flame for 10 minutes.stir occasionally

When pumpkin turn soft.mash with the spatula add Chilli powder and salt. Mix and cook for 5-7 minutes. Then cook on high flame for 3-4 minutes.keep stirring.

Ingredient

1 kg

chicken

* Step 1

First rinse the rice and soaked into water for 1/2 hour.meanwhile clean the chicken and in a wok take 3 cups of water add chicken,1/2 tsp orange food colour and 1 tsp salt. Put on gas and give a boil.then strain it and keep aside.

In another wok add oil heat it add sliced onion and fry until it turns golden brown. Transfer in a plate. In the same oil add 2 bay leaf,1 inch cinnamon, star anise mace,pepper corns,cloves and cumin seeds.saute few seconds.

Now add crushed green chillies, ginger garlic saute 1 minute.add chopped tomatoes and red Chilli powder along with 1 tsp salt add little water.cook on medium flame when tomato turn soft.

Add curd and cook when oil separate add chicken mix add some water cover and cooked on medium flame until chicken has tender.add 3 tbsp fried onion. Mix and cooked for 3-4 minutes add biryani masala cook for a minute.turn off the flame

Now take soaked rice add remaining whole spices in the rice,add broken 6-7 green chillies,salt to taste add 1tsp oil and boiled when rice has 80% cooked.drain it.

In the same wok add some cooked chicken then add some boiled rice.add fried onion and mix lightly then repeat the process and add chicken,rice and fried onion mix again.

Then in 2 tbsp water add 1/4 tsp orange food colour mix and spread on the top of biryani.sprinkle some fried onion and kewra water. Cover and cooked on simmer for 10 minutes.switch off the flame.

Ingredient

mint leaves

* Step 1

First wash the chicken very well. put in a mixing bowl.add yogurt, 1 tsp ginger paste,1 tsp garlic paste,red chilli powder,2tbsp chopped mint and coriander leaves,add 1 tsp salt mix all together nicely. Cover and keep aside for half an hour.washed the rice and soaked in water for half an hour.

Take a vessel add oil heat it add 3 onion slices and fry until they turn golden brown.transfer the half onion in a plate. meanwhile the onion will be fry take the tomatoes and 3 green chillies in a mixer jar and grind them to make a fine paste.

Now in the same oil add cumin seeds,1 bay leaf,pepper corn,2 cloves,2cardamom,one cinnamon stick,mave and star anise.saute few seconds add one onion slices saute.when onion turns brown add marinated chicken saute for 4-5 minutes.then add remaining ginger garlic paste. Add 1/2 tsp salt or as taste. mix well.cook it on high flame for 5 minutes then add tomato chilli paste.add little water mix well. cover and cook on medium flame until chicken turn soft.

After 10 minutes chicken turn soft and release water remove the lid.cook it on high flame until the water has evaporated.when it release oil and become little dry add biryani masala mix well turn off the flame. Take a vessel add rice and add 8 cups water.add caraway seeds bay lead and remaining whole spices.add slit green chillies and 4 tsp salt.add one tsp oil cover and cook the rice when it cooked 80%turn off the flame and strain the rice.

Take a big vessel put on low flame.apply one layer of chicken then add a layer of rice.spread some fried onion,coriander and mint leaves.then again spread the chicken layer and rice then add fried onion, coriander and mint leaves.repeat the same process third time.

At the last layer done.take Orange food colour in a cup add little water mix well.add this colour on the top of rice.add lemon juice and kewra water.cover and cook it for 5 minutes.turn off the flame. Spicy and yummy Biryani has done.
