* Step 1

Grind coriander leaves, green chilies, onion, ginger, and garlic to a coarse paste.

* Step 2

Add to wheat flour. Add chickpea flour and rest of the ingredients Crumble 2-3minutes. Add water to form a soft dough.

* Step 3

Apply 1 tsp oil on dough, cover, and leave for 15 minutes.

* Step 4

Roll into a paratha of your desired shape. Cook on medium heat and fry in ghee to golden.

* Step 5

Serve with pickle/raita.

spring onion

chaat masala

* Step 1

Heat 1 tbsp oil in a wok,add ginger and garlic saute 1 min.

Add chopped onion and green chilli.Saute till translucent.

* Step 3

Add all veggies,sautefor 1 minute.Add powdered spices.Mix well.Add salt.Saute few minutes on medium flame.

Put off flame,add chopped spring onion.Mix and leave for 5 minutes.Make slurry of wheat flour by adding some water.Keep aside.

Take roll sheet,add 1 tbsp stuffing on roll and make roll as shown in video.

Seal the edges of roll with the help of slurry.Prepare all rolls.

Heat oil in a wok,fry roll on medium heat till golden

Cooking instructions

* Step 1

Mix all ingredients of covering,and make a soft dough by adding some water.Cover and keep aside.

* Step 2

In a pan add oil,add cumin seeds and asafoetida.Add ginger and green chilli.Saute 1 minutes on low flame.Add chopped onion and fry till golden.

* Step 3

Add boiled peas and all powderd spuces with salt.Mix them all.Mash a little the peas.Cook for 2 minutes on low flame.

* Step 4

Put off flame and let the filling cool.

* Step 5

Divide the dough into lemon sized balls,flatten them,fill 1 tbsp of peas filling.Mahe kachodis.

* Step 6

Heat oil and fry kachodis on low -medium heat till golden.

* Step 7

Serve hot with chutney.Enjoy.

500 grams

mutton

curd

1/4 cup

Cooking instructions

* Step 1

Heat a vessel,add oil and let it warm.Add lotus seeds and fry slightly.Take out and keep aside.

* Step 2

Add thinly sliced onions till golden brown.Take out half onion.

* Step 3

Add mutton to the vessel,add whole spuces also.Saute till water dries.

* Step 4

Add ginger garlic paste,saute 1 minute.Add powdered spices,exept garam masala powder.

* Step 5

Add one cup water.Cover and cook on low-medium flame till mutton is 70%cooked.

* Step 6

Now grind remaining fried onion with lotus seeds.Keep aside.

* Step 7

After mutton is 70%done add curd and saute for 2 minutes,add fried onion-lotus seeds paste,stir.Saute 2-3minutes.

* Step 8

Add garam masala powder.Add water if needed.Further cook till mutton is done.

* Step 9

Garnish with chopped coriander leaves(oprional)

* Step 10

Mutton is ready to be served.

* Step 11

For chapati,make a sodt dough of wheat flour by add ing some water Knead till soft.

* Step 12

Cover and leave for 15 ninutes.

* Step 13

Roll chapatis,serve hot.

* Step 14

Serve mutton curry with hot chapatis.Enjoy.

Wash and soak moong dal for 2 hours.

Strain,transfer to a grinder.Add green chillies,ginger and garlic.

Grind semi coarse.Take out in a bowl.

Add chopped onion,all leaves and spuces.Mix and add salt just before frying.

Heat oil ina pan,take out a small ball sized batter,make round with the help of fingers,put in medium heated oil.

Put all,do not disturb the pakodas for early few minutes.Flif after 2-3minutes.Fry till golden
