Cooking instructions

* Step 1

Take all the ingredients of seekh kabab in a bowl.Mix well.

* Step 2

Take a ball sized pinch,shape oval and make seekh kabab as shown in picture.

* Step 3

Heat oil in a pan and shallow fry kababs till golden.Take out and keep aside.

Cut hot dog into tow halves,then cut transversely.

* Step 5

Apply 1 tbsp hot dog sauce on one piece,add cucumber slices,tomato slices and 1 seekh kabab.

Add onion slices,followed by mayonnaise sauce.Put another piece of bun and compleate the bun.

1/2 cup

fried onion

lemon juice

Cooking instructions

* Step 1

Grate potatoes and put in a mixing bowl.

* Step 2

Add all spices ginger and greenchilli paste. Mix,add chopped coriander leaves,mint leaves and salt.

* Step 3

Crush fried onion with hand and add to potato.Mix well.

* Step 4

Make kababs.Heat a non -stick pan,add oil and fry kababs on medium flame till golden brown.

* Step 5

Take out and serve with your favourite chutney /sauce.

500 grams

basmati rice

4 tbsp

ghee

200 grams

chicken mince

1/2

milk

2 tbsp

fresh cream

1/2 cup

curd

to taste

Cooking instructions

* Step 1

Wash and soak rice for 30 minutes.Add 1tbsp salt.Boil till done.Drain and keep aside.

* Step 2

Put chicken mince in a grinding jar.Add all the ingredients of kabab.Add salt as per taste,also add 1tbsp fried onion.Grind to a smooth paste.

* Step 3

Take out the chicken mix,make kababs using a skewer.

Fry kababs on low flame till golden.Take out and keep aside.

* Step 5

Preparing gravy:In a wok heat ghee,add whole garam masala,add onion and fry till transluscent.Add pepper powder,cumin powder and chopped green chillues.Saute and cook fo 2 minutes.

* Step 6

Add curd and mix well.Cook for 3-4minutes on low flame.Now mix cream with almond paste and add milk.Stir and add to gravy.Add salt as per taste.Cook on low flame for 2-3minutes or till gravy is thick.Put off flame and keep the gravy aside..

* Step 7

Assembling of biryani: In a greased pan add 1/3part of boiled rice.Add a ladle ful of gravy followed by some fried onion.Add rice again,gravy and fried onion.Arrange seekh kababs on rice.

Add remained rice,gravy and fried onion.Add kewra water and garnish wirh chopped coriander-mint leaves.

Cover and put on braise for 10 minutes on lowest flame.

Serve with raita.

Ingredient

500 grams

minced mutton

1 tbsp

lemon juice

1 tbsp

mustard oil

to taste

Cooking instructions

* Step 1

Take minced mutton in a bowl.Add all ingredients,mix well.Cover and leave for 30 minutes.

After 30 minutes,divide mince into 6-8balls.

* Step 3

Make one ball into oval shape,pierce the seekh into the ball and make kabab as shown in picture.

Heat a non-stick pan and add oil.Fry kababs on low -medium heat till golden brown.

Serve hot with salad and green chutney.

Cooking instructions

* Step 1

Take 1 cup water in a pan.Add leftover curries and chicken pieces to pan.Heat on a stove.Add bay leaf,salt and cinnamon powder.

Cover and cook on medium flame for 10 minutes or till chicken is tender.

* Step 3

Dry water in the pan,if any.Transfer the chicken-curry mixture to a grinder.Discard bay leaf and grind the mixture.Take out in a bowl.

Add chopped coriander leaves,green chilli,fried onion,cumin powder,salt,amchoor powder and bread crumbs.

Make kababs,insert 2-3pieces of cashew and one raisin in each kabab,seal and shallow fry.

Make green chutney by grinding coriander leaves,garlic and green chilli.Mix 1tbsp green chutney to leftover raita and make a curd -coriander dip.Garnish with chilli flakes.

Fry all the kebabs and serve hot with curd-coriander dip.
