Cooking instructions
* Step 1
Firstly dry roast all the ingredients of chola masala except the last four till roasted smell comes out.
* Step 2
Turn off the flame add the other 4 ingredients, mix it well. Grind it to a fine powder, keep aside.
* Step 3
Take a pressure cooker, wash the chole, add in the cooker.
* Step 4
Now add 1 tea bag, 1 bari elaichi, 5 laung, 1/2 tsp kali mirch sabit, 1 dalchini & 4 choti elaichi in a pc of cloth, make a potli.
* Step 5
Add this in the cooker, also add 4 cup water & 1 tsp salt. You can add 1/2 tsp baking soda as per your wish.
* Step 6
Place the lid, give 8 whistles on high flame. Lower the flame, cook it for 10 minutes.
* Step 7
Turn off the flame, allow it to depressurise naturally.
* Step 8
Take out in a bowl, keep aside. Do not discard the water in chole.
* Step 9
Now take an iron wok, add oil, heat it.
* Step 10
Add hing, stir it. Now add ginger garlic grated, saute it until rawness is released.
* Step 11
In goes onion & green chilli, saute it until light brown.
* Step 12
Add in haldi, red chilli powder & Kashmiri red chilli powder, mix it well.
* Step 13
Mix amchur powder with chola masala, add in the masala, stir it nicely. Add lil water to avoid burning. Stir fry it until oil has oozed out.
* Step 14
Now add tomato puree & salt, mix it well. Lower the flame, cover it with the lid, cook it until oil has surfaced.
* Step 15
Open the lid, add black salt & tamarind, mix it well. Add in boiled chole along with water, mix it well.
* Step 16
Cook it on high flame till dry. Turn off the flame, cover it for 5 minutes.
* Step 17
Take out in a serving bowl, garnish it with chopped dhania patta.
* Step 18
Can be had along with Poori, Paratha or Kulcha.

Tadka is optional....your choice...
* Step 20
Take a tadka pan, add ghee, heat it. Add red chilli flakes, pour it immediately over the cooked chola.
