1 . Schezwan paneer

Cooking instructions

* Step 1

Deseed the red chilli and soak in a warm water for half an hour and make a paste Marinate paneer with corn flour,all-purpose flour, salt, black pepper little amount of water to make thick batter.

Heat oil in a pan and deep fry the marinated paneer cubes and strain it. Again heat one tbsp oil in a pan,add ginger garlic and saute for one mins now add onion and saute until transparent

Add red chilli paste and mix well,add soy sauce and tomato sauce and mix well Add salt and sugar and mix

Add paneer cubes and cook for five mins,turn off the flame Serve hot with fried rice or chowmein

* Step 1

Dry roast the whole red chilli,whole coriander seeds and cumin seeds.

Once cooled to make a powder.

Also make a paste of onion and ginger garlic.

Heat oil in a pan,add onion and ginger garlic paste and saute for 4 - 5 mins

Grind to make a paste of tomato and add in the pan,saute for 4 - 5 mins.

Now add turmeric powder and ground masala powder and mix well.

Add kashmiri mirch powder and green chilli and mix it well

Stir continuously until oil leaves the pan.

Now add one cup of water and bring to boil.

Once boiled add paneer cubes,salt and garam masala and mix well.

Garnish with coriander leaves.

Cooking instructions

* Step 1

Heat oil in a pan.

* Step 2

Add sliced onion and deep fry till golden brown. and keep aside.

* Step 3

Now add cinnamon stick,green cardamom,black cardamom,cumin seeds and mace.

* Step 4

When it crackle add tomato,turmeric powder,coriander powder,red chilli powder and half cup of water.

* Step 5

Now we add boiled chickpea and salt and mix well.

* Step 6

Add half of fried onion in it.

* Step 7

Take a pan add first layer of half done rice.

* Step 8

Now add chole masale,mint leaves,coriander leaves,julienne of ginger,green chilli.

* Step 9

Second layer repeat the same process.

* Step 10

Now add coconut milk and cover it and cook in a slow flame for five mins.

* Step 11

Garnish with fried onion and serve.

* Step 1

Marinate chicken with 1 tsp ginger garlic paste,turmeric powder,1 tsp red chilli powder,lemon juice,salt,hung curd and mix well.

* Step 2

Keep rest for half an hour.

* Step 3

Take a pan/handi add clarified butter.

* Step 4

Add cinnamon stick,star anise,bay leaf,cloves,green cardamom and fry it.

* Step 5

Add sliced onion and saute for 2 - 3 mins

* Step 6

Add 1 tsp ginger garlic paste,tomato,mace paste,nutmeg powder,1 tsp red chilli powder,green chilli and also add marinated chicken and mix well.

* Step 7

Add crushed m int leaves,curry leaves,coconut milk,coriander leaves and mix well.

* Step 8

Add crushed mint leaves,curry leaves,coconut milk,coriander leaves and mix well.

* Step 9

Add 1 liter of water and bring to boil.

* Step 10

Add rice and salt and mix well.

* Step 11

Cover and cook in a low flame til done the rice.

* Step 12

Serve hot.
