This is a very simple but beautiful recipe for an ice cream cake. I have baked my sponge cake but you can buy if you have no time, buy a baked sponge cake and follow rest of the recipe.

Ingredient

1 tsp

vinegar

sugar

oil

40 ml

milk

* Step 1

In a large mixing bowl, blend egg whites with vinegar, until creamy and stiff.

Then gradually add sugar and keep mixing.

Add egg yolks, use hand whisk and mix them. Use a sieve or colander and sift the flour and salt and gradually adding it to the mixture.

Add oil, milk and vanilla extract to the batter and whisk it until combine together.

And fill cake pan with batter. Place the pan on the third rack in the oven and bake it for 35-40 minutes.

Once cake baked, set it aside to cool down and remove it from the pan.

Use a knife and cut a circle in top of the cake and remove top level of the cake within the circle.(as you see in the photos)

Hollow out the cake. Being careful not to take out the bottom of the cake. Put scraps of the cake into a bowl.

Put cream, icing sugar and honey in a bowl and add scraps of the cake to the bowl. Mix well all together.

Then fill inside the hollow with cream mixture.

Cover top of the cake with fresh fruit and freeze the cake for 2 hours until topping is firm..

Any breakfast based on oats will keep you fuller for longer, and even though this granola might look like a chocolate treat it's actually packed with goodness and slow release carbohydrates. I used almonds, cashews and sunflower seeds in this version, but so long as you keep the balance of wet and dry ingredients the same you can use any combination of nuts, seeds and fruit that you want. Try pumpkin or sesame seeds, coconut flakes or linseed, hazelnuts or pecans, or even peanuts, and you can also add dried fruit, although I suggest stirring those in at the end rather than toasting them. Crispy raisins... bleuch. You can also discard the chocolate element entirely and go vanilla, or try using maple syrup instead of honey.

Warm the oil, honey, chocolate and salt in a pan until the chocolate has melted.

Measure the oats, nuts, seeds and sugar together in a bowl. Preheat the oven to 160C/Gas 2.

Pour the oil and chocolate mixture into the bowl of oats and nuts and mix together really well.

Line a roasting tray with baking parchment, use two if you don't have a large one, the granola needs to be spread thinly enough to toast evenly.

Bake for 15 minutes, then remove from the oven and gently mix. I use the paper to pile the granola in the middle then re-spread it all out. Return to the oven for 10 minutes more, but keep a close eye and check after 5, you don't want it to scorch even slightly.

You want the nuts to be golden coloured. It will crisp at it cools, so if it's still a little chewy it doesn't mean its not had enough cooking time, and remember you can always put it back in.

Leave to cool completely before transferring to an airtight container. You can use the paper again to just pour it in. Serve with ice cold milk.

Cut mars bars into cubes a put into a glass bowl. Add syrup and butter.

Place bowl over a bain marie (pan 1/4 filled with already boiled water). Ensure the water does not touch the bottom of the bowl.

Gently melt the chocolate, stirring carefully as it does so to combine the ingredients.

Once melted fully, stir in a spoonful of rice crispies at a time. Carefully fold into the chocolate mixture and repeat.

Press gently into a lined tin. Use a smaller tin for deeper slices.

Pop into the fridge to set for at least 30 minutes.

Slice into bitesize squares using a very sharp knife.

This is an easy pumpkin purée that you can use to make drinks, add into your pancake mixture and much more.

Ingredient

Roast pumpkin on 150c for about 45 min. Scoop out the fresh, transfer it to a blender, add some honey, ground cinnamon, nutmeg, 1-2 tbsp spoon of water and salt then blend together.

Transfer to a small saucepan and turn low heat on, keep stirring the purée and let it simmer for about 5-8 min until the mixture thicken up a little bit. It can be sieve through a strainer to get a finely texture.

baking soda

* Step 1

Line a baking tray with greased wax paper. In a pot on low heat, add the sugar and honey. Let the sugar melt. Turn the heat up to medium heat for 5 mins and then let it simmer until golden in colour. Add the vanilla essence.

Take the pot off the heat and whisk in the bicarbonate of soda quickly.

Pour the syrup immediately into the prepared tray.

Leave it to set slightly and cut it into pieces with a greased knife as required then leave it to harden.Enjoy
