Wondering what to cook today, I found Tuna can in my pantry sitting there for month so I've decided to create this Tuna Vegan Burger Recipe for Sandwhich and surprisingly it tastes so delicious yet delicate. Tuna is rich in Omega 3.

* Step 1

Heat 4 Tbs oil in a wok, then add the tomatoes, stir fry for 2 minutes, then add the Capsicum, garlic and Green Onions and stir fry for another 2 minutes. Spread the Tuna pieces on top. Beat 4 eggs with fork in a small bowl, add 1 tbs milk to dilute (egg wash) and mix, then sprinkle with a little salt & grinded black pepper and mix again.

Then pour the beaten eggs mixture into the wok over the fried vegetables,then with hand put the grated cheese on top of the eggs mixture, spreading evenly. Lowering down the temp to avoid to burn the eggs mixture at the bottom layer, cover the wok with a lid to steam for 1'. It burn quickly so start to divide the mixture into 4, then with a spatula turn over each pieces gently & continue to cook for another 1' then cover with a lid. Warm the bread rolls in microwave for 8' then slice into half.

Put the warm bread into individual serving plate. Top with a slice of the cooked Tuna mixture. Enjoy 😍

I use the veges whatever I found them in the fridge. This clear soup is for lunch usually ate in indonesia and there are hundreds versions of soto from region to region of Indonesian arcipelago islands but I prepare the very simple one in my own version, you can add a few veges, protein meat /fried tofu/boiled egg and seafood of your personal choice. To be serve with Indonesian Hot Sambal sauce

* Step 1

Steam the potato cubed for 17' in a double pot. Cook,set aside.Toasted the Peanut with the skin on a dry pan for 2', remove and set aside. Marinade the chicken pieces for 15' with Hoisin Sauce & Mirin. In a wok put the 2 tbs oil & heat.Add the onions and stir-fry for 2' then add the marinade chicken, garlic paste, ginger paste, lemon grass and mix. Sprinkle with pinch of salt on chicken add grinded black pepper & continue to stir-fry for 2' until chicken are half cook. Don't overcook. Set aside

Then add all the veges cabbage, red capsicum, carrot, celery and mix them and stir-fry for 2'. Quickly add water, Chicken bouillon/stock, ground Cardamom, cayenne pepper, add the half cooked egg noodles, the cooked potato, The Chicken meat, Thai Savoury Soya sauce, Tomato Sauce, Lemon juice and the Marinade liquid, and mix all together. Taste the season

Let the soup boil, then turn down the heat, and simmer until noodles are just tender. Then turn the heat off. Remove and transfer into a serving bowl.

* Step 4

Divide into individual serving bowls.Spread on top the fried Peanuts. Decorate on top with a sprig of parsley and half of lime. To serve with hot fluffy Jasmine Rice and regional Indonesian hot Sambal or Thai Sriracha Hot Chili sauce. 😚🍝🍅🌶🥜

The lockdown has effected badly to almost everybody around the globe in many ways and to me too. The prices of food has increased almost in double. Shortage of many foods on the shelf, we have to bake our own bread in bread maker machine or making simple flatbread. Yesterday I bought some tuna cans on reduced price, as the supermarket tried to get rid off its brand. Fortunately I like the can of tuna in olive oil. Tuna is good for health for Omega3. Its a palatable recipe for lunch, I do hope it will make happy everybody. 😋 To serve on toasted bread, smear with butter, then top with 2 types of homemade salsa, of capsicums onions and of mushroom-tomatoes one and lastly put the tuna chunks on top!

* Step 1

Peel the potato, slice them thickly and steam the potato for 20'. Remove and put into a small glass bowl, add salt & grind black pepper, 1 tbs softened butter and mashed them adding 1/2 cup milk and continue to mash and then add 1 tbs chopped parsley and a handful of grated cheese and mix with a big spoon. Transfer into a serving bowl.

Drain the tuna,put on a plate and squeeze to flatten the chunk with a fork.

To serve the tuna as a sandwich on toasted 🍞sliced ciabatta bread: spread with butter first, then top with lettuce, then add tuna, then top again with my home made stir-fried capsicum-onions salsa or with my home made stir-fried mushrooms-tomatoes onions-garlic salsa. Side dish: a few tbs of Mashed Potato

Serve to drink with a mug of warm Lemon Ginger tea bag or a mug of Jasmine tea (dark red colour, has natural sweet and has a vanilla fragrance just natural from the earth from Indonesia).😋🎏🐟🌮🍅🧀🍵

We're in down south of the globe close to Antartic and our country is still in Lockdown. To warm the house atmosphere I decided to cook a Vegetarian Nacho with salsa Guacamole, a simple dinner as the kid love the nacho corn chips so much! Usually I love to cook with the minced beef but not this time. For the side dish I cook the baked Savoury Potato Wedges. 👨‍👩‍👧🤹‍♀️

Ingredient

* Step 1

Preheat oven to 200 degrees Celcius. Put the baking dish with the Potatoes Wedges in the lower rack and bake for 20' or so.Turn half way. When the potatoes are cooked has golden brown. Take the dish out. Cover with foil and set aside. In a large non stick wok put Rice Bran oil, sauteed half of the red onion, garlic then add the capsicum and a little of olive oil and stir fry for 2 minutes until softened.

Stir fry in the Tomatoes tin breaking the tomatoes up with the wooden of spoon. Add 1 Red onion, ground coriander and cumin, cayenne pepper, salt, crushed black pepper, 2 tsp sugar, oregano, the 2 cans Red Beans and mix them all together with the wooden spoon. Lower the stove's temp and slow cook for 10 minutes or until thickened slightly.

On a lined baking tray spread the Corn chips and bake for 10 minutes or until lightly golden & crisp, dont forget to keep on watching or they burn quickly. Remove.

In a medium glass bowl make the Salsa Guacamole by lightly stirring together the remaining 1/2 red onion, avocados pulp, fresh tomatoes, red capsicum, coriander leaves or parsley,1 tsp sugar, lemon, lime &lemon juice, lemon zest, salt, minced Jalapeno pepper or 1 tbs Scriracha Hot Chili Sauce and mix all together. Season to taste.

To serve: on a big individual plate spread the Corn chips first, put the Red bean mixture over top, then pour over a big spoonful of the salsa Guacamole and 1 tbs Cream cheese.

* Step 6

To serve also with the homemade baked Potato wedges. 🤗 Cheers, a happy faces have already shown to my kid who are waiting, sitting around the table 😍❣

#summerchallenge2 Inspiration from Italy. It's a side dish of fried Aubergine with fresh tomatoes, Red onions, Capsicum, fresh red chili, optional can be added button Mushrooms. It's so delicious as a side dish to any meat, chicken casseroles or fish dishes, to serve with a bowl of steamed Rice.

Ingredient

* Step 1

Prepared the vege, chopped or dice them into a small size: in a wok put 1 Cup oil, turn the temp on high, put the onion & stir-fry for 2' then add the tomatoes and stir-fry for 3' then add the capsicums, mushrooms, Red chilies, garlic paste, parsley, salt and grinded black pepper,and mix all together & stir-fry for 4' keep turning then add the egg plants and 1 cup of red wine stir fry for another 4'. Till the alcool evaporated then add the herb Parsley and stir for just 1'. Taste the season.

Then add the cornflour mixture. Cook another 1' to thicken, then turn off the heat. Transfer into a deep flat bowl. Delicious to serve meat or fish and with a bowl of steamed Jasmine Rice.😍Happy cooking😍💖
