The main ingredient of this dish is Okra. It surprises me to know that there are many people who have never cooked OR eaten Okra. My favourite cooking method is deep-frying, but stir-frying would be the easiest. Today I stir-fried Okra with Pork, but you can use Chicken instead. As I always eat the dish with Rice, I made it into a rice bowl. Quick and easy, and delicious!

Ingredient

1 teaspoon

Sesame Oil

1/2 tablespoon

Sugar

1/2 tablespoon

Soy Sauce

1/2 tablespoon

Oyster Sauce

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small bowl.

* Step 2

Heat Sesame Oil in a frying pan over medium heat, cook Okra for a few minutes, add Pork, and stir until Pork is nicely browned. Add the Sauce and stir to combine.

* Step 3

Half fill a bowl with warm Cooked Rice, cover it with the Okra and Pork mixture, and enjoy.

I had a pack of 350g thinly sliced Pork. I wanted to cook a dish for 4 servings. I could have stir-fried the Pork with vegetables, but I didn’t have suitable vegetables. I only had salad vegetables. Then, I decided to cook this ‘Mazegohan’. 'Mazegohan’ is a Japanese dish of Rice. Rice and other ingredients are cooked separately and mixed together after they are cooked. I added plenty of Ginger. So tasty!!!

Ingredient

1/4 teaspoon

Salt

1 teaspoon

Oil

2 tablespoons

Soy Sauce

2 tablespoons

Mirin

1/2-1 teaspoon

Sugar

Cooking instructions

* Step 1

Wash Rice and place in the rice cooker’s inner pot. Add Water up to the 2-cups marking, add Kombu (Kelp) Dashi Powder, Ginger and Salt, and gently stir. Press ‘COOK’ button to start cooking.

* Step 2

Combine all the Sauce ingredients in a small bowl. Alter the amount of Sugar to suit your taste. I added 1 teaspoon today.

* Step 3

When the Rice is cooked, add Edamame (OR Peas), and let them steamed for 10 minutes.

* Step 4

Cut thinly sliced Pork into bite-size pieces. Heat Oil in a frying pan over high heat, cook Pork. When cooked, add the Sauce, and cook until the sauce is gone and Pork is slightly caramelised.

* Step 5

Add the Pork to the Rice, then mix to combine roughly. Sprinkle with Spring Onion, and serve.

It is a custom for Japanese to eat Soba Noodle Soup on New Year’s Eve. However, it can be very hot at this time of year in Melbourne where I live, and I often cook a cold dish of Soba Noodles. But it is always nice to have a hot dish like this one. I enjoyed this Soba Noodles as we had unusually cool weather this year.

Ingredient

4 tablespoons

Mirin

4 tablespoons

Soy Sauce

Cooking instructions

* Step 1

Place all the Soup ingredients in a saucepan and bring to the boil over medium heat. Add Pork, Shiitake and hard parts of Spring Onion(s), and cook for a few minutes, then add soft parts of Spring Onion(s).

* Step 2

Meanwhile, cook Soba Noodles according to the instruction. I cooked my Dry Soba Noodles in boiling water for 4 minutes. *Note: DO NOT add Salt to the water.

* Step 3

When Soba Noodles are cooked, drain, and place in serving bowls. Pour over the hot soup, add some Shichimi (Japanese Chilli Spice Mix), and enjoy.

I recently discovered that a local Asian grocery store is selling super thinly sliced Beef. The Beef slices are frozen and in tube shape. Using those super thinly sliced Beef, this ‘Beef & Egg Rice Bowl’ is quick and easy to prepare.

Ingredient

1/2 tablespoon

Mirin

1 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Place the Sauce ingredients in a small frying pan and bring to the boil. Scatter Beef and sliced Spring Onion, and cook until Beef is cooked. It won’t take long.

* Step 2

Pour the whisked Egg to cover, and cook until Egg is softly set OR half cooked. DO NOT stir.

* Step 3

Half fill a bowl with warm Cooked Rice and cover it with the Beef and Egg mixture. Sprinkle with some Shichimi (Japanese Chilli Spice Mix), and enjoy.

5 . Wombok Okonomiyaki

Japan’s famous savoury pancake ‘Okonomiyaki’ is commonly made with Cabbage, but other vegetables can be used, and I have shared my recipes on this website. Today I used Wombok, and it worked fine. The texture of the thick white parts of Wombok is lovely in Okonomiyaki, however, ‘Wombok Okonomiyaki’ tends to become wet. You need to alter the amount of water to use when you make the batter.

Ingredient

1

Egg

1-2 teaspoons

Oil

Cooking instructions

* Step 1

Clean Wombok leaves. If you wash them with water, drain well, then slice into 6-7mm thick pieces.

* Step 2

Combine Egg, Flour, Water and Dashi Powder in a mixing bowl, add Wombok, and mix to combine. *Note: The batter should be thick and just enough to combine Wombok.

* Step 3

Heat Oil in a frying pan and cook Pork on both sides. Cover with the Wombok mixture and form a pancake.

* Step 4

Cook for 2 to 3 minutes, then flip the pancake over, and cook for 2 to 3 minutes until cooked through. You may turn the pancake over a few times.

* Step 5

Place the pancake on a plate with the Pork on the top.

Dress with Okonomiyaki Sauce and Japanese Mayonnaise, and sprinkle with Aonori (optional). If you have Katsuobushi (Bonito Flakes), you may wish to sprinkle with it as well.
