Simmered Hairy Melon & Pork

One day about 20 years ago, I was walking on a street in Melbourne with Liana, my sister in law, and my daughter who was very young then. In front of a greengrocer, a vegetable caught my eyes. ‘Hairy Melon? That’s a unique name for a vegetable. Is it hairy?’ Liana touched it and said, ‘Oh! It is hairy.’ Then my young daughter also touched it and said, ‘Feels like Granny’s leg.’ Liana and I burst into laughter. Since then, the vegetable called Hairy Melon has become well known among my family members. It is suitable for stews and soups.

Ingredient

2 tablespoons

Sake (Rice Wine)

1 tablespoon

Soy Sauce

1/2 teaspoon

Sesame Oil *optional

Cooking instructions

* Step 1

Cut off the ends of Hairy Melon, cut into 2cm thick rounds, then remove tough skin, and cut each round into quarters.

* Step 2

*Note: If you prefer, you can peel the skin first and cut into bite-size pieces, but it might be difficult to do so as the skin is hard and thick.

* Step 3

Place all the Soup ingredients in a large saucepan OR deep frying pan, add Hairy Melon pieces, cover with a lid, and bring to the Boil. Simmer for 5 minutes.

* Step 4

Add Pork pieces, cover with the lid, and bring back to the boil, then simmer, stirring occasionally, for 5 to 10 minutes OR until Hairy Melon is soft.

* Step 5

Add Salt and White Pepper as required. Stir the Potato Starch mixture, and gradually add it to the soup as you stir until the desired thickness is achieved. You don’t need to add all of it.

* Step 6

Sprinkle with some finely chopped Spring Onion, and serve hot.

Using the same ingredients as ‘Pork & Egg Rice Bowl’, I made this rice bowl today. It is a very comforting and satisfying dish. This recipe is for 1 serving. It would be easy to multiply for more servings. If you don’t eat Pork, Chicken can be used. Minced Pork is also suitable.

Ingredient

1 teaspoon

Soy Sauce

1 teaspoon

Oyster Sauce

1 teaspoon

Mirin

1/4 teaspoon

grated Ginger

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small bowl.

* Step 2

In a separate bowl, whisk Eggs and season lightly with Salt and White Pepper. Prepare all other ingredients.

* Step 3

Place warm Cooked Rice in a serving bowl or deep plate. Heat 1 teaspoon Oil in a small frying pan over medium heat, cook the whisked Eggs softly, and cover the Rice with it.

* Step 4

Add a small amount of extra Oil to the pan if required, and cook Pork and Shiitake Mushrooms. When Pork is cooked, stir the Sauce very well and add it to the pan. Bring to the boil and stir until the Sauce is thick.

* Step 5

Pour the Sauce over the Egg, add some finely chopped Spring Onion, and enjoy.

Spicy Pork & Harusame Soup

Here is another simple Harusame Soup for you to try. It’s super quick and easy to prepare. First you make the soup. You can season it as spicy as you want. Today I added 1 & 1/2 teaspoons Toban Djan (Chilli Bean Sauce) and some Rāyu (Chilli Oil), and it was quite hot and still enjoyable for me. You may wish to add more.

Ingredient

1/2 teaspoon

grated Ginger

1 teaspoon

Soy Sauce

1 teaspoon

Oyster Sauce

1/2 teaspoon

Sesame Oil

Cooking instructions

* Step 1

Prepare all ingredients before you start cooking.

* Step 2

Heat Chicken Stock in a saucepan, add other Soup ingredients except Salt, and bring to the boil. Taste it, and add some Salt if required. Today I didn’t add Salt.

* Step 3

Add Pork to the boiling Soup. When colour has changed, add Dry Harusame Noodles and Spring Onion, and cook until the noodles are soft. It won’t take long.

Add some Rāyu (Chilli Oil) for extra heat, and enjoy.

‘Buta’ means ‘Pig’ OR ‘Pork’ in Japanese. This is a Udon Noodle version of the popular ‘Buta Don’ (Pork Rice Bowl). It is extremely simple to make, yet it is delicious, and better than take away stir-fried noodles. The Egg Yolk is optional but highly recommended. The Egg Yolk would be slightly cooked by the heat of hot Udon Noodles and Pork, and creates a yummy sauce.

Ingredient

1/2 teaspoon

Sugar

1 tablespoon

Soy Sauce

1 tablespoon

Mirin

Cooking instructions

* Step 1

Heat Cooked Udon Noodles in boiling water, then drain.

* Step 2

Combine all the Sauce ingredients in a small bowl.

* Step 3

Heat Oil in a small frying pan over medium heat, cook Pork and Chilli. When cooked, add the Sauce, and cook until the sauce thickens.

* Step 4

Place the drained Udon Noodles in a serving bowl, cover with Pork, add Egg Yolk, Spring Onion and Toasted Sesame Seeds, and enjoy.

Pork & Wombok Harusame Soup

This is another super quick & easy soup that you can cook with Dry ‘Harusame’ Noodles, aka ‘Bean Vermicelli’ OR ‘Thread Noodles’. I love to add ‘Harusame’ to soups as it makes the soups more filling and just one bowl of soup can be a meal. Today I added Pearl Barley as well, but already cooked Pearl Barley. It’s so comforting and filling.

Ingredient

1 teaspoon

Soy Sauce

1 teaspoon

Oyster Sauce

1 leaf

Wombok

1 teaspoon

Sesame Oil

Cooking instructions

* Step 1

In a measuring jug OR bowl, combine Chicken Stock, Soy Sauce and Oyster Sauce.

* Step 2

Cut Wombok leaf into 1cm wide pieces, and separate hard white parts and soft parts. Prepare Pork and Spring Onion, and all other ingredients ready to use.

* Step 3

Heat Sesame Oil in a saucepan, and cook Pork and the hard white parts of Wombok. When Pork has changed colour, add the Chicken Stock mixture and Cooked Pearl Barley, and bring to the boil.

* Step 4

Taste the soup, and add Salt & White Pepper as required.

* Step 5

Add Dry ‘Harusame’ Noodles. The noodles will get soft very quickly. Add the soft parts of Wombok and Spring Onion, bring back to the boil, and cook until Wombok and Spring Onion are soft.
