Today I added Black Fungus to my ‘Simple Egg Soup’ and seasoned it with Oyster Sauce instead of Soy Sauce. This soup was so comforting and I enjoyed the crunchy Black Fungus. It’s getting cold in Melbourne where I live. This is a perfect soup to enjoy with freshly cooked Rice.

Ingredient

1/2 teaspoon

Sesame Oil

Cooking instructions

* Step 1

Soak Dried Black Fungus in water in a small bowl until softened. You can use hot water to speed up. Wash very well, drain, and cut in half if large.

* Step 2

Place Chicken Stock, Sesame Oil, Oyster Sauce (OR Soy Sauce) and Black Fungus in a saucepan, and bring to the boil. Simmer for a few minutes, and add Salt & White Pepper to taste. *Note: The amount of Salt depends on the saltiness of the Stock.

* Step 3

Add Potato Starch mixture to the boiling soup as you stir. Once the soup is thickened, add whisked Egg slowly in a circular motion into the soup, but do not stir straight away. When the Egg is softly set, gently stir.

* Step 4

Add some finely chopped Spring Onion and enjoy.

Easy Hot & Sour Soup with Udon

It was my daughter who introduced me Hot & Sour Soup. She uses a variety of ingredients and it takes time to prepare Hot & Sour Soup properly. This is my super quick and easy recipe that I use when I crave it. Today I thickened the soup thicker than normal, and pour it over hot Udon Noodles. You can pour it over Rice. It can be a very comforting and filling meal.

Ingredient

1/2 teaspoon

grated Ginger

1/2 tablespoon

Soy Sauce

1/2 tablespoon

Oyster Sauce

1/2 tablespoon

Mirin

1 tablespoon

Rice Vinegar

1 teaspoon

Sesame Oil

Cooking instructions

* Step 1

Prepare all ingredients before you start cooking.

* Step 2

Place all the Soup ingredients except for Potato Starch in a saucepan. Bring to the boil, then add Pork (OR Chicken).

* Step 3

When Pork is cooked, add Potato Starch mixture gradually to thicken the soup. You don’t need to add all of it.

* Step 4

When the soup is thickened, add Egg, and gently stir. When Egg is softly cooked, soup is done.

* Step 5

Heat Cooked Udon Noodles in boiling water, then drain. Place in a serving bowl, pour the soup over, add some Spring Onion, and enjoy. *Note: This soup can be enjoyed without Udon.

I always stock Eggs. When I need to make a soup quickly, this soup is always an option. As you can read in the ‘Steps’ below, it is super easy and can be made in a few minutes. You can add other ingredients such as Wakame and Asian Mushrooms. But this soup is comforting and delicious as it is with just 1 Egg.

Ingredient

1 teaspoon

Sesame Oil

1 tablespoon (3 teaspoons)

Soy Sauce

Cooking instructions

* Step 1

Place Chicken Stock, Sesame Oil, Soy Sauce in a saucepan, and bring to the boil. Add Salt & White Pepper to taste. *Note: The amount of Salt depends on the saltiness of the Stock.

* Step 2

Add Potato Starch mixture to the boiling soup as you stir. Once the soup is thickened, add whisked Egg slowly in a circular motion into the soup.

* Step 3

Add some finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy.

Before I freeze thinly sliced Pork to store, I cut it into bite-size pieces and divide into several portions making each portion is for 1 serving (about 80g). I have found it very convenient. Using 1 portion of the frozen Pork, I can cook a variety of nutritious dishes very quickly. This is a super easy Udon dish.

Ingredient

1 teaspoon

Oil

1 teaspoon

Curry Powder

1 teaspoon

Soy Sauce

Cooking instructions

* Step 1

Prepare all ingredients before you start cooking. Finely chop up a green part of Spring Onion, then diagonally slice the rest of it. Thickly slice Shiitake. Cut thinly sliced Pork into bite-size piece.

* Step 2

Heat Cooked Udon Noodles in boiling water, then drain.

* Step 3

Heat Oil in a saucepan and cook Pork. Add Garlic, Ginger and Curry Powder, and stir. Then add Chicken Stock, diagonally sliced Spring Onion and Shiitake, and bring to the boil.

* Step 4

Season with Salt and Soy Sauce. Alter the amount of Salt depending on the saltiness of the stock.

* Step 5

Add Udon Noodles and bring back to the boil, then add the Potato Starch mixture and stir until the soup is thickened.

* Step 6

Add the finely chopped green part of Spring Onion and some Shichimi (Japanese Chilli Spice Mix), and enjoy.

I often use Iceberg Lettuce for cooking. Here is a soup recipe that you can try. This soup recipe requires only Iceberg Lettuce and Egg, but you can add other Vegetables and Mushrooms such as Enoki OR Shiitake for better flavour. I usually don’t use Oil to make soups, but some drizzle of Rāyu (Chilli Oil) takes this soup to next level.

Ingredient

1 tablespoon

Sake (Rice Wine)

1/2 teaspoon

grated Ginger

Cooking instructions

* Step 1

Mix Potato Starch with Water in a small bowl. Whisk Eggs in a separate bowl. Prepare everything before you start cooking.

* Step 2

Place Chicken Stock, Sake (Rice Wine), Garlic and Ginger in a saucepan, and bring to the boil over medium heat. Add Iceberg Lettuce. When Lettuce is soft, it won’t take long, season with Salt and White Pepper. You may wish to add some Soy Sauce.

* Step 3

Stir the Potato Starch mixture very well, add it to the simmering soup, and stir. Once the soup is thickened, add whisked Eggs slowly in a circular motion into the soup, and stir gently.

* Step 4

Add some finely chopped Spring Onion and Toasted Sesame Seeds, drizzle with some Rāyu (Chilli Oil), and enjoy.
