Yesterday, my son made a proper Dashi Stock using Bonito Flakes that is called ‘Hana Katsuo’ (花かつお). ‘Hana Katsuo’ makes a very nice dashi stock, but it was almost tasteless after being used. DO NOT discard the tasteless Bonito Flakes. I made this ‘Furikake’ using the tasteless Bonito Flakes. If you have a microwave, it is easy to make.

Ingredient

Cooking instructions

* Step 1

‘Hana Katsuo’ (Bonito Flakes) that’s been used to make Dashi Stock is wet. Squeeze to remove excess water, spread over a plate, and microwave at medium power, 500 to 600W, for 30 seconds. Then repeat, occasionally stirring, until completely dry.

* Step 2

Once it is dry, it must be easy to break into fine crumbs. Mix with Unused ‘Katsuobushi’, add Mirin and Soy Sauce. Alter the amount of Soy Sauce, depending on the amount of Bonito Flakes, to suit your taste. You can add Sugar for sweeter flavour.

* Step 3

Spread over a plate, and microwave at medium power, 500 to 600W, for 30 seconds, then repeat until dry.

* Step 4

Add Toasted Sesame Seeds and Toasted Nori, and mix to combine. Enjoy it with freshly cooked Rice. *Note: This ‘Furikake’ won’t last long like commercially produced ‘Furikake’. Store in the fridge and eat it in several days.

For this Harusame Soup, Chicken can be replaced with Pork OR Beef. I often add Ginger to Wakame Soup, but I added Garlic to this soup. This is a Korean inspired version of Wakeme Soup. Add Harusame Noodles (Bean Thread Noodles) to the seasoned soup. Noodles get cooked very quickly and make this soup more filling and comforting.

Ingredient

1 tablespoon

Dried Cut Wakame

Cooking instructions

* Step 1

Prepare all ingredients before you start cooking.

* Step 2

Heat Chicken Stock in a saucepan, add Garlic and Sesame Oil, and bring to the boil. Season with Soy Sauce, Salt and White Pepper.

* Step 3

Add Chicken, cover with a lid, and cook for a few minutes. Add Dry Harusame Noodles and Wakame, and cook until the noodles are soft. It won’t take long.

Add some finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy.

‘Kimu-Taku’ Mackerel Mazegohan

The combination of ‘Kimchi’ and ‘Takuan’ (Japanese Pickled Daikon) is very popular. ‘Kimu-Taku’ Rice is an example that you can cook with them. Today I made this ‘Mazegohan’ using a can of Mackerel. ‘Mazegohan’ is a Japanese dish of Rice. Rice and other ingredients are cooked separately and mixed together after they are cooked. However, you don’t need to cook anything to make this dish if you have already cooked Rice. Just mix everything together. This messy looking dish is actually really yummy.

Ingredient

2 tablespoons

Kimchi

1 teaspoon

Sesame Oil

Cooking instructions

* Step 1

Cut ‘Takuan’ (Pickled Daikon) into small pieces OR strips. Cut Kimchi into smaller pieces if large.

* Step 2

Place drained Mackerel, ‘Takuan’, Kimchi, Sesame Oil and Sesame Seeds in a mixing bowl, add Soy Sauce and mix well.

* Step 3

Add Spring Onion, warm Cooked Rice and Nori, and roughly mix to combine.

4 . Zucchini with Garlic, Chilli and Sesame

Zucchini with Garlic, Chilli and Sesame

This is a dish of Zucchini that is quickly stir-fried and seasoned with Soy Sauce. Absolutely quick and easy dish. I strongly recommend to use Sesame Oil made from Roasted Sesame Seeds to stir-fry Zucchini. Enjoy with chilled Beer OR freshly cooked Rice, etc.

Ingredient

1 pinch

Salt

1/2 tablespoon

Toasted Sesame Seeds

Cooking instructions

* Step 1

Cut Zucchini into 2-3mm thin slices.

* Step 2

Heat Sesame Oil in a frying pan over medium high heat, add Zucchini slices, Garlic and Chilli, and stir-fry for 1 minute, season with a pinch Salt, and remove from the heat. *Note: Zucchini should retain the crunchiness. DO NOT over cook it.

* Step 3

Add Soy Sauce and Toasted Sesame Seeds, and mix to combine. Add extra Salt if required and enjoy with chilled Beer OR freshly cooked Rice, etc.

5 . Oats & Egg Porridge

‘Ojiya’ Egg Rice Porridge is what I want to eat when I am not well OR extremely tired. If I have some already cooked Rice, it is easy to prepare. If I don’t have any cooked Rice, Oats is the easiest substitute. I always season the soup very lightly when I am not well.

Ingredient

Cooking instructions

* Step 1

Place Chicken Stock in a saucepan and bring to the boil. Season with Soy Sauce, Salt and White Pepper. *Note: The amount of Salt depends on the saltiness of the Stock and your preference. I recommend to season the soup very lightly, particularly if you are not well.

* Step 2

Add Quick Oats (OR Rolled Oats) and cook for a few minutes OR until Oats are soft. Add whisked Egg slowly in a circular motion into the porridge and let it softly cooked. Add Spring Onion and gently stir.
