To make Teriyaki Sauce, I use Sugar, Soy Sauce and Mirin. I sometimes add extra ingredients for flavours, such as Garlic, Ginger, Chilli, etc. It’s a very simple sauce and you can easily alter the flavour to suit your taste and ingredients. You don’t need to buy a bottle of Teriyaki Sauce. Using thinly sliced Beef, this rice bowl can be cooked in less than 5 minutes. Pork OR Lamb can be used instead of Beef.

Ingredient

1/2 tablespoon

Sugar

1/2 tablespoon

Mirin

Cooking instructions

* Step 1

Combine all the Teriyaki Sauce ingredients in a small bowl.

* Step 2

Heat a small amount of Oil in a frying pan over high heat, cook Beef until nicely browned, but I won’t take a long time at all.

* Step 3

Add the sauce and cook for 1 minutes. When the sauce is thickened, it is done. Half fill a bowl with warm Cooked Rice and cover it with the Beef. Add some Spring Onion, Toasted Sesame Seeds and Shichimi (Japanese Chilli Spice Mix), and enjoy.

I have Garlic Chives growing in the garden and also in a pot. This plant is very tough and never dies. It just spreads and grows. Today I picked some and cooked with Pork Mince. I often season with Oyster Sauce, but I used Gochujang (Korean Spicy Miso) and Soy Sauce today. It was a simple stir-fry. I made it into a rice bowl as I always eat it with Rice. Ahhh… it was yummy.

Ingredient

1 teaspoon

Sesame Oil

1/2 teaspoon

grated Ginger

1 teaspoon

Sugar

1 tablespoon

Mirin

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small bowl.

* Step 2

Heat Sesame Oil in a frying pan, cook Pork Mince, Garlic and Ginger over medium heat. When cooked, add Garlic Chives and the Sauce, and stir until Garlic Chives are soft. DO NOT over cook.

* Step 3

Half fill a bowl with warm Cooked Rice, cover with the mixture, add Egg and Crispy Chilli Oil, and enjoy.

I would have used Soy Beans for this dish, but I couldn’t find Large Dried Soy Beans. Chickpeas are always a great substitute. You can use Canned Chickpeas OR Edamame Beans instead. If you do so, you need to alter the cooking time. Kombu (Kelp) might be an unfamiliar sea vegetable for you. I like it and I eat it a lot. I enjoyed this dish with freshly cooked Rice.

Ingredient

1 tablespoon

Sesame Oil

2 tablespoons

Mirin

1-2 teaspoons

Rice Vinegar

Cooking instructions

* Step 1

Soak Dried Chickpeas in cold water overnight and cook for 15 to 20 minutes until firmly cooked, then drain. *Note: Chickpeas will be cooked with other ingredients later. Do not cook them until soft.

* Step 2

Soak Dried Shredded Kombu (Kelp) in cold water for 10 minutes, drain, rinse, and drain again. Cut them short if loo long.

* Step 3

Heat Sesame Oil in a saucepan over medium heat, add Carrot and Kombu, and stir. Add Chickpeas, Water, Soy Sauce, Mirin and Sugar. Add some extra Water if needed to cover. *Note: Chilli can be added.

* Step 4

Bring to the boil, then lower the heat, cover with a lid, and simmer, mixing occasionally, for 20 minutes.

* Step 5

After 20 minutes, remove the lid, and cook, mixing and tossing occasionally, until the sauce is gone. Sprinkle with Rice Vinegar, and mix to combine.

This is a typical Japanese home-cooked dish. It is quite popular, I often cook it, but probably you have never seen it as you won’t come across a dish like this at Japanese restaurants. Use Pork Belly for this dish, so that Kombu absorbs its fat and ‘umami’. You need to simmer until Kombu is fairly soft. You can add Chilli if you like. Enjoy this dish with freshly cooked Rice.

Ingredient

1 cup

Water

2 tablespoons

Mirin

1-2 teaspoons

Rice Vinegar

Cooking instructions

* Step 1

Soak Dried Shredded ‘Kombu’ (Kelp) in cold water for 10 minutes, drain, rinse, and drain again. *Note: You can slice Kombu by knife. Find ‘How To Thinly Slice Kombu (Kelp)’

* Step 2

Heat Sesame Oil in a saucepan over medium heat and cook Pork pieces. When cooked, add Ginger and ‘Kombu’, and stir. Add Water, Soy Sauce, Mirin and Sugar.

* Step 3

Bring to the boil, then lower the heat, cover with a lid, and simmer, stirring occasionally, until the sauce is gone. By then, Kombu should be soft. Sprinkle with Rice Vinegar, and mix to combine.

This is another super quick and easy dish that is perfect for my lunch. Today I used leftover Beef Mince, but naturally you can use thinly sliced Beef. Pork is also good. Garlic Chives is garlicky, but I recommend to add Garlic as well. It’s a very simple dish, yet really yummy with Rice.

Ingredient

1 teaspoon

Sesame Oil

1 tablespoon

Mirin

1/2 teaspoon

Sugar *optional

Cooking instructions

* Step 1

In a small bowl, combine the Sauce ingredients. Sugar is optional. Add it if you like the sauce sweeter.

* Step 2

Heat Sesame Oil in a frying pan over medium high heat and cook Beef Mince and Garlic. When the Beef Mince changed the colour, add Garlic Chives and the Sauce, and stir until combined well.

* Step 3

Half fill a bowl with warm Cooked Rice and cover it with the Beef mixture. Sprinkle with some Shichimi (Japanese Chilli Spice Mix) and enjoy.
