Beef Mince & Tofu Rice Bowl

One of my family’s favourite dinner menus is ‘Sukiyaki Don’. I use a variety of Vegetables to cook it, but I am reluctant to do that when I cook it only 1 serving for myself. This simple version is what I most frequently cook. It’s yummy, nutritious and very filling.

Ingredient

1/2 teaspoon

grated Ginger

1/2 tablespoon

Sugar

1 tablespoon

Mirin

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small bowl.

* Step 2

Heat Oil in a frying pan over medium heat, cook Beef Mince. Add the Sauce and Green Vegetable, and bring to the boil. Add Tofu and cook until the sauce is thickened.

* Step 3

*Note: Some Vegetables can be cooked very quickly. If you use Garlic Chives OR Baby Spinach, add them very last.

* Step 4

Half fill a bowl with warm Cooked Rice, cover it with the mixture, and enjoy.

Stir-fried Tomato, Pork & Egg is a dish I repeatedly cook. We always eat it with freshly cooked Rice, so I made it into a rice bowl. Sweet ripe Tomatoes in season are the best, but I often use not-so-great Tomatoes for stir-fries. When Tomatoes are sour, a little bit of Sugar improves the flavour. Chicken can be used instead of Pork.

* Step 1

Whisk Eggs and lightly season with Salt & White Pepper. Heat Oil in a frying pan over medium heat, cook Eggs softly, and transfer to a plate or the bowl that you used to whisk the Eggs.

* Step 2

Add Pork and cook until nicely browned. Lightly season with Salt & White Pepper. Add Garlic, Tomato pieces and Chilli Flakes, and cook for a few minutes.

* Step 3

When Tomato pieces are softened, add Soy Sauce (and Sugar), and stir. Return the Egg and gently combine.

* Step 4

Half fill a bowl with Freshly Cooked Rice and cover it with the mixture, sprinkle with some finely chopped Spring Onion, and enjoy.

Salmon & Oyster Mushrooms with Garlic Butter & Soy Sauce

‘Garlic, Butter & Soy Sauce’, this combination goes so well with Meat, Chicken, Fish, Pasta, Rice, Potato, Corn, and so many things. I often add Mirin as well, because Mirin adds sweetness and ‘umami’. I highly recommend to add Chilli OR Freshly Ground Pepper. This dish can be a great topping for rice bowl.

* Step 1

Remove all bones from Salmon Fillets and cut into chunky bite-size pieces. Lightly season with Salt and Pepper, and coat them with Potato Starch (OR Corn Starch).

* Step 2

Melt Butter in a frying pan over medium low heat and cook Salmon pieces until slightly browned.

* Step 3

Add Oyster Mushrooms, toss and stir for a few minutes, then add the Sauce. Stir to combine. Sprinkle with Spring Onion and Shichimi (Japanese Chilli Spice Mix), and serve immediately with freshly cooked Rice.

* Step 4

*Note: This mixture can make a nice rice bowl.

‘Takikomi Gohan’ is a Japanese dish of Rice that is cooked with other ingredients and seasonings. There are some very traditional ones and this is one of them. To cook a ‘Takikomi Gohan’, everything is supposed to be cooked together, but you won’t cook Clams with Rice together for this particular dish. You cook Calms in a frying pan first. You will have some delicious liquid from Clams and you use it to cook Rice. Clam meat will be mixed with Rice after it is cooked. It’s a very simple dish, yet absolutely delicious.

* Step 1

Clean Clams and place them in a deep plate or container in a single layer. Pour over Salted Water, set aside in a cool place for 1-2 hours, and let them spit out the grit. *Note: Some store-bought Clams are ready to use without doing this process.

Clean the Clams with fresh water before you cook them.

* Step 3

Place Clams in a frying pan, add Sake (Rice Wine), cover with a lid, and cook over medium heat until all Clams are open.

* Step 4

Remove all Clams to a plate and place all the liquid in the pan into a measuring jug. Add Water up to 400ml marking. Add Soy Sauce and Mirin, and mix well.

* Step 5

Wash Rice, drain, and place in rice cooker’s inner pot. Pour the Soup over, scatter Ginger, and press the Cook/Start button. When the rice is cooked, let it steamed for 10 minutes.

* Step 6

Meanwhile, remove Clam meat from the shell and place in a small bowl. You may wish to sprinkle with a very small amount of Soy Sauce, then set aside.

* Step 7

When Rice is steamed, add Clam meat, and gently mix to combine. Sprinkle with some finely chopped Spring Onion and serve.

This Japanese rice bowl dish is often served with Wasabi. The sauce is made with Garlic, Butter and Soy Sauce, which is a great combination, and Wasabi matches this sauce. In the western cuisines, Horseradish is often used for Beef dishes. Wasabi has very similar flavour. I definitely enjoy this ‘Beef Steak Don’ with grated Wasabi OR Wasabi pastes, however you may prefer Chilli OR Black Pepper.

* Step 1

Season Beef Steak with Salt and Black Pepper fairly well, then drizzle a small amount of Oil over and coat Beef Steak with the Oil.

* Step 2

Heat a frying pan until hot, cook Beef Steak as you like. I cooked it medium rare. When cooked, transfer to a plate and allow to rest.

* Step 3

While the Steak is resting, prepare Vegetables. Finely chop up Spring Onion. Today I cut white parts into fine strips. I also cut a piece of Carrot into fine strips. Avocado can be sliced OR cut into bite-size pieces.

* Step 4

Heat the frying pan over medium heat, add Butter and Garlic. When aromatic, add Soy Sauce and Sake (Rice Wine), and simmer until the sauce thickens slightly.

* Step 5

Slice the rested Beef Steak. Half fill a bowl with warm Cooked Rice, place Vegetables and sliced Steak on the Rice, drizzle with the sauce. Sprinkle with finely chopped Spring Onion, and add some Wasabi, only a small amount.
