Vegan Shiitake & Abura-age (Fried Thin Tofu) Mazegohan

‘Mazegohan’ is a Japanese dish of Rice. Rice and other ingredients are cooked separately and mixed together after they are cooked. This is a vegan ‘Mazegohan’ and the main ingredients are Shiitake Mushrooms and Abura-age (Fried Thin Tofu). You can add other Asian Mushrooms as well. You may be interested in the ‘Abura-age & Asian Mushrooms Takikomigohan’.

Ingredient

1/2 teaspoon

Salt

1/2 tablespoon

Oil *I Used Sesame Oil

2 tablespoons

Soy Sauce

2 tablespoons

Mirin

1 teaspoon

Sugar

Cooking instructions

* Step 1

Wash Rice and cook as normal with Salt.

* Step 2

Combine all the Sauce ingredients in a small bowl.

* Step 3

Heat Oil in a small frying pan, cook Shiitake pieces. When cooked, add the Sauce and stir, then add ‘Abura-age’ (Fried Thi Tofu) and Edamame, and stir until Abura-age is soft.

* Step 4

When Rice is cooked, add Shiitake mixture to the Rice and mix to combine. Sprinkle with some finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy.

I have shared my recipe ‘Monk’s Vegan Soup’ that is called ‘Kenchin-jiru’ in Japan. ‘Kenchin-jiru’ is 100% plant-based soup. It is full of flavours as a variety of ingredients are added. This is a ‘Kenchin-jiru’ inspired rice bowl dish. Please use many different Vegetables and Asian Mushrooms, and Abura-age (Fried Thin Tofu) is essential for this dish.

Ingredient

1 teaspoon

Sesame Oil

1/2 cup

Water

1 tablespoon

Soy Sauce

1/2-1 tablespoon

Mirin

Cooking instructions

* Step 1

Combine all the sauce ingredients in a small bowl. Alter the amount to suit your taste.

* Step 2

Heat Sesame Oil in a frying pan, cook Vegetables. It takes longer time to cook some Vegetables. Please cook them accordingly. Lightly season with Salt & Ground Chilli OR White Pepper.

* Step 3

Add Abura-age, stir the sauce well and add it to the pan. Stir well until the sauce thickens and all ingredients are softly cooked. Half fill a bowl with warm Cooked Rice and cover it with the mixture.

My family’s favourite ‘Asian Mushroom Takikomigohan’ can be even tastier and more nutritious with Abura-age (Fried Thin Tofu). If you are Vegan, use plant-based stock such as Shiitake Dashi OR Kombu (Kelp) Dashi. This rice dish and a refreshing salad would make me a perfect meal.

Ingredient

1 tablespoons

Soy Sauce

1 tablespoon

Sake (Rice Wine)

1 tablespoon

Mirin

1 teaspoon

Sesame Oil

Cooking instructions

* Step 1

Slice or tear Mushrooms into smaller pieces. Slice Ginger into fine strips. Combine Mushrooms and sliced Ginger, add Soy Sauce and Sake (Rice Wine), mix well and set aside.

* Step 2

Wash Rice, drain, and place into the rice cooker’s inner pot. Add Dashi Stock (OR Water and Dashi Powder) up to the 2-cups-marking. Add Soy Sauce, Mirin, Salt and Sesame Oil, and gently stir.

* Step 3

Spread the Mushroom mixture over the rice, spread Abura-age (Fried Thin Tofu), then press ‘COOK’ button to start cooking.

* Step 4

When the rice is cooked, let it steamed for 10 minutes, then mix gently. Sprinkle chopped Spring Onion or mix it with rice. Place some Toasted Nori and Sesame Seeds on top, and enjoy.

Where I grew up in Japan, Bamboo Shoots were not something we purchase from stores. Bamboo shoots came out of the ground in every spring wherever bamboos were growing. Some of our family relatives and friends who owned bamboo groves always shared their seasonal harvest with us. I miss the fresh Bamboo Shoots. One of my favourite Bamboo Shoot dish is this Takikomigohan. Today I cooked it using Canned Bamboo Shoot. It was quite delicious.

Ingredient

1 tablespoon

Mirin

1 tablespoon

Soy Sauce

1 teaspoon

Sugar

1 teaspoon

Sesame Oil

1/2 teaspoon

Salt

Cooking instructions

* Step 1

Drain and rinse the cooked Bamboo Shoot, cut into small (OR bite-size) pieces, and place in a small bowl. Add Mirin, Soy Sauce, Sugar and Sesame Oil, mix to combine, and set aside.

* Step 2

Wash Rice, drain, and place in the rice cooker’s inner pot. Add Water up to the 2 cups marking. Add Dashi Powder and Salt, and gently stir.

* Step 3

Scatter Abura-age pieces and Bamboo Shoot pieces with all the liquid over the Rice, but DO NOT stir. Press ‘COOK’ button to start cooking.

* Step 4

When the rice is cooked, let it steamed for 10 minutes. Then loosen and mix gently. Sprinkle with some finely chopped Spring Onion and enjoy.

Abura-age (Thin Fried Tofu) & Egg Rice Bowl

This dish is almost identical to my ‘Tofu & Egg Rice Bowl’, but the texture is meat-like and quite different. ‘Abura-age’ is thinly sliced & deep-fried Tofu. It is popularly used for Japanese cooking as a plant-based protein. I like this dish not very sweet, but you may wish to add more Sugar.

Ingredient

2 tablespoons

Mirin

2 tablespoons

Soy Sauce

Cooking instructions

* Step 1

Wrap Abura-age with paper towel and heat in microwave for 30 seconds. Then press to remove excess oil. Cut into small pieces. *Note: If you don’t have the microwave, soak in hot water is alternative option.

* Step 2

Place Water, Dashi Powder, Sugar, Mirin and Soy Sauce in a frying pan or saucepan, and bring the boil over medium high heat. Add sliced Spring Onion and Abura-age, cook until Spring Onion is soft.

* Step 3

Pour over lightly whisked Eggs but DO NOT stir. Cover with a lid until the egg is softly cooked.

* Step 4

Half fill a bowl with Freshly Cooked Rice and cover it with the Abura-age & Egg mixture. Sprinkle with Shichimi (Japanese Chilli Spice Mix) if you like it and enjoy.
