Already cooked Udon Noodles are very handy to stock. I often use Cooked Udon to make my lunch. Today I had some thinly sliced Pork Belly which is also very handy to have as it can be cooked very quickly. Cook Pork in a frying pan while Udon is being heated in boiling water. This scrumptious dish can be made in five minutes.

Ingredient

1 teaspoon

Sesame Oil

1 tablespoon

Soy Sauce

1 tablespoon

Mirin

Cooking instructions

* Step 1

Cut thinly sliced Pork into bite-size pieces and lightly season with Salt & White Pepper. Mix all the Sauce ingredients in a small bowl. Prepare all ingredients before you start cooking.

* Step 2

Heat Cooked Udon Noodles in boiling water.

* Step 3

Heat Sesame Oil in a frying pan over high heat, cook Pork pieces. When changed colour, lower the heat to medium, add the Sauce, and stir for a minute.

* Step 4

Drain the softened Udon Noodles, add to the pan, and stir to combine.

* Step 5

Place in a serving plate, add Egg Yolk on top, sprinkle with some finely chopped Spring Onion and Toasted Sesame Seeds. I added some Crispy Chilli Oil as well.

Pork & Seafood ‘Champon’ Udon Soup

‘Champon’ is a Japanese word that means ‘a mixture of various items’. ‘Champon’ Noodle Soup is often made with Pork, Seafood and a variety of Vegetables. Milk is often added to the soup. It is truely a mix of many different ingredients, and it is absolutely delicious. This recipe is for 1 serving. You can easily multiply the recipe.

Ingredient

1 teaspoon

Sesame Oil

1/2 teaspoon

grated Ginger

1/4 cup

Milk

Cooking instructions

* Step 1

Prepare the ingredients. Cut into bite-size pieces. Seafood should be thawed if frozen.

* Step 2

Heat Sesame Oil in a large saucepan over medium high heat, cook Pork, then add Seafood and other ingredients, Ginger and Garlic, and stir for a few minutes.

* Step 3

Add Chicken Stock, bring to the boil, season with Soy Sauce (OR Oyster Sauce), Salt and White Pepper, add Milk and simmer for a few minutes.

* Step 4

Meanwhile, heat Cooked Udon Noodles in boiling water in a saucepan. When hot, drain and place in a serving bowl. Cover with the mixture and the soup. Drizzle with Rāyu (Chilli Oil) and enjoy.

I regularly purchase a nicely lean block of Pork Belly, cut into smaller blocks, half freeze and thinly slice, then cut into bite-size pieces before freezing to store. These already cut thin slices are so handy to have. They can be used straight away for stir-fry or soup or anything. It didn’t take long to cook this delicious Udon Soup.

Ingredient

1 teaspoon

Sesame Oil

1 teaspoon

Soy Sauce

Cooking instructions

* Step 1

Heat Cooked Udon Noodles in boiling water, then drain.

* Step 2

Finely chop up a green part of Spring Onion, then diagonally slice the rest of it. Cut thinly sliced Pork Belly into bite-size pieces.

* Step 3

Heat Sesame Oil in a saucepan and cook Pork. When cooked, add Soup ingredients and bring to the boil.

* Step 4

Add diagonally sliced Spring Onion and Udon Noodles, cook for a few minutes. Add extra Salt if required.

* Step 5

Place in a bowl, add Egg and finely chopped Spring Onion, add Chilli Oil if you like it, and enjoy. Today I added some Crispy Chilli Oil.

Stir-fried Udon with Tomato, Zucchini & Avocado

On a summer day, I picked Tomato and Zucchini in my garden and stir-fried them with Udon Noodles for lunch. I could have added Meat OR Tuna, but I added Avocado. I almost always add Spring Onion to this type of dish, but I added Shiso, which came from my garden, too. It turned out a very simple Vegan dish, and I enjoyed its clean flavour.

Ingredient

1 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Heat Cooked Udon Noodles in boiling water, and drain.

* Step 2

Heat Oil, Garlic and Chilli in a frying pan over medium heat. When aromatic, add Tomato and Zucchini, and stir-fry. When softened, add Soy Sauce and stir.

* Step 3

*Note: If you have ‘Mentsuyu’, you can use it instead of Soy Sauce. You would need 2-3 tablespoons.

* Step 4

Add drained Udon Noodles and Avocado, and stir to combine.

* Step 5

Place in a serving plate, top with some finely chopped Spring Onion (OR Shiso), and enjoy.

5 . Tuna Mayo Udon

In Melbourne where I live, January is in the middle of summer. It can be really hot and the temperature could go over 40℃. I don’t want to cook anything on such a hot day. Cold Noodle Dish is ideal for me. If you keep a bottle of ‘Mentsuyu’ (Noodle Dipping Sauce) in fridge, this dish can be prepared in 10 minutes.

Ingredient

1 tablespoon

Japanese Mayonnaise

Cooking instructions

* Step 1

To make 1/4 cup ‘Mentsuyu’, combine following ingredients in a small heat-proof bowl. Heat in the microwave and cool. – 3 tablespoons Water – 1/8 teaspoon Dashi Powder – 1 tablespoon Soy Sauce – 2/3 tablespoon Mirin *Note: If you like cold noodles, it’s good to have a bottle of ‘Mentsuyu’ in the fridge. It can be used for many dishes as a seasoning.

* Step 2

Heat Cooked Udon Noodles in boiling water, rinse under cold water, then drain.

* Step 3

Drain canned Tuna and squeeze to remove excess water. If you use Tuna in water, season lightly with Salt. Tuna in brine doesn’t need Salt as it is already salty.

* Step 4

Add Japanese Mayonnaise and Wasabi Paste, and mix well.

* Step 5

Place drained cold Udon Noodles in a deep plate, add Tuna mixture on top, scatter Toasted Nori, sprinkle with finely chopped Spring Onion and Toasted Sesame Seeds. Pour cold ‘Mentsuyu’ and enjoy.
