It was time to make my lunch. I had a look in the fridge to see what I had and saw a small amount of thinly sliced Beef. I instantly decided to cook ‘Beef & Wakame Soup’. I added Udon Noodles to make it into a filling meal. This is another quick & easy Udon dish. It was cold today and the hot Udon soup was very comforting.

Ingredient

1/2 teaspoon

Sesame Oil

1 teaspoon

Soy Sauce

1 tablespoon

Dry Cut Wakame

Cooking instructions

* Step 1

Heat Cooked Udon Noodles in boiling water, then drain.

* Step 2

Heat Sesame Oil in a saucepan and cook Beef. Add Garlic and Stock, bring to the boil, and season with Soy Sauce, Salt & Pepper. Add Dry Cut Wakame and simmer until Wakame is soft.

* Step 3

Place the drained Udon in a bowl, cover with the soup, add Spring Onion and Toasted Sesame Seeds, and enjoy.

I have a fond memory attached to this soup as one of my sisters frequently made this soup for our family members. She always used Beef Mince, which sometimes caused me coughing because the tiny pieces of Beef went to wrong way. I prefer using thinly sliced Beef. I wonder if my sister is still making this soup. She never made any other soups for us. It was always this Beef & Wakame Soup, which was delicious.

Ingredient

1 teaspoon

Sesame Oil

2 cups (500 ml)

Beef Stock

1 teaspoon

Soy Sauce

2 tablespoons

Dry Cut Wakame

Cooking instructions

* Step 1

Heat Oil in a large saucepan over medium high heat, cook Beef slices. Add Beef Stock and Garlic (OR Ginger), bring to the boil, and skim off the scum on the surface.

* Step 2

Season with Soy Sauce and Salt & White Pepper. Add Wakame and simmer until Wakame is soft.

* Step 3

Sprinkle with finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy.

Here is another dish you can make with the humble Canned Tuna. This is a 'Mezegohan' dish. Rice and other ingredients are cooked separately and mixed together. You can actually use leftover cooked rice for this dish. In that case, you don’t need to cook anything. Just mix all ingredients. Anyone can make it.

Ingredient

2 tablespoons

Dry Cut Wakame

1 tablespoon

Soy Sauce

1 teaspoon

Sesame Oil

1 teaspoon

Sugar

Cooking instructions

* Step 1

Soak Dried Cut Wakame in cold water until soft, drain and squeeze to remove excess water. *Note: If Wakame pieces are large, break (or cut) into smaller pieces before soak.

* Step 2

Place the squeezed Wakame in a mixing bowl, add all other ingredients except for Spring Onion, and mix well.

* Step 3

Add warmed cooked Rice, and mix to combine. Sprinkle with some Spring Onion and enjoy. *Note: Spring Onion can be mixed in if you prefer.

When we make Dumplings such as Gyoza and Wonton, we often end up having leftover wrappers. I add them to soup and this ‘Wakame Soup’ is my absolute favourite. Today I used Wonton Wrappers. Make sure you add the wrappers one sheet at a time.

Ingredient

2 tablespoons

Dry Cut Wakame

1-2 teaspoons

Sesame Oil

1/2 teaspoon

Salt *OR as required

Cooking instructions

* Step 1

Soak Dry Cut Wakame in cold water for 10 minutes or until soft, drain and squeeze to remove excess water.

* Step 2

Heat Sesame Oil in a saucepan, stir-fry Ginger, then add Wakame and cook for a minute. Add Chicken Stock and bring to the boil. Season with Salt and White Pepper.

* Step 3

Cut Dumpling Wrappers into the size that is easy to eat, add to the boiling soup one sheet at a time. Simmer until Dumpling Wrappers are softly cooked.

* Step 4

Sprinkle with some finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy.

This is Wakame only soup. I recommend to add fresh Ginger. An absolutely simple soup, often served at Chinese restaurants in Japan, very popular over there, and I often crave for it.

Ingredient

2-3 tablespoons

Dry Cut Wakame

1-2 teaspoons

Sesame Oil

1/2 teaspoon

Salt *OR as required

* Step 1
