Rubbery Udon Noodles can go well with many different flavours. Today I cooked Beef Stroganoff using leftover Beef and Sour Cream, and added Udon Noodles to it. It was a surprisingly good match. Pickled Cucumber is absolutely recommended as I always add it to my ‘Super Easy Beef Stroganoff’. If you don’t have Udon Noodles, Pasta is a perfect substitute for this dish. Gnocchi would be great.

Ingredient

2-3 tablespoons

Sour Cream

Cooking instructions

* Step 1

Heat Cooked Udon Noodles in boiling water, then drain.

* Step 2

Heat Oil in a frying pan over the medium heat. Cook Onion and Garlic, add Beef, then add Mushroom. Stir for a few minutes.

* Step 3

Season strongly with Salt and Pepper. Add Sake (OR Water, Stock OR Wine) and Sour Cream, Pickled Cucumber and Udon, and stir to combine.

* Step 4

Sprinkle with some extra Black Pepper and finely chopped Parsley, and enjoy.

Beef & Carrot in Japanese Flavour

Many Japanese dishes are seasoned with Sugar, Soy Sauce and Mirin. The flavour is something I crave every now and then. This ‘Beef & Carrot’ is seasoned with those three. The dish has no special element, yet it tastes so good to me. With freshly cooked Rice and a comforting soup, and maybe with a small refreshing vegetable dish, it perfects a Japanese style meal.

Ingredient

1 tablespoon

Sugar

2 tablespoons

Soy Sauce

1 tablespoon

Mirin

Cooking instructions

* Step 1

Cut Carrot in half lengthways, and cut diagonally into 2-3mm thick slices. Slice Beef Steak as thinly as you can. Cut Ginger into fine strips.

* Step 2

Heat Oil in a frying pan, cook Carrot. When half cooked, add Beef and Ginger, add Chilli Flakes if you add any, and stir until Beef is cooked.

* Step 3

Add Sugar, Soy Sauce and Mirin, and stir until sauce is almost gone. Serve with freshly cooked Rice.

Beef & Asian Mushroom Mazegohan with Gochujang

‘Mazegohan’ is a Japanese rice dish. Rice and other ingredients are cooked separately and mixed together. This is a Korean inspired ‘Mazegohan’ that I used Gochujang (Korean Spicy Miso) for seasoning. It’s spicy but only slightly. You might be interested in Japanese flavoured ‘Asian Mushroom Mazegohan’ and ‘Asian Mushrooms & Garlic Mazegohan’.

Ingredient

1 teaspoon

Sesame Oil

1 tablespoon

Sugar

2 tablespoons

Soy Sauce

Cooking instructions

* Step 1

Wash Rice and cook as normal.

* Step 2

Thinly slice Beef Steak and cut into bite-size pieces. Slice Shiitake. Cut off the bottom of Shimeji and Enoki, tear OR cut into smaller pieces. *Note: All Mushrooms need to be cut into the size that is easy to eat.

* Step 3

Combine all the sauce ingredients in a small bowl.

* Step 4

When the Rice is cooked, start cooking Beef. Heat Sesame Oil in a frying pan, cook Beef pieces. When cooked, add Mushrooms, but do not add Enoki yet as Enoki can be cooked very quickly.

* Step 5

When Mushrooms are cooked, add Enoki, add the sauce, and stir to combine. Add the mixture to the cooked Rice and gently mix to combine. Add Salt OR extra Soy Sauce if required.

* Step 6

Sprinkle some chopped Spring Onion and Toasted Sesame Seeds, and serve. *Note: You may wish to add some Kimchi as well.

Leftover Iceberg Lettuce has been sitting in the fridge for a while. I didn’t want to make a salad as it was too cold. I wanted to cook something warm and more comforting. So, I stir-fried it with Beef. When I stir-fry Beef, I often use Oyster Sauce to season it. Iceberg Lettuce retains its crunchiness even after cooked, and it was delicious with Garlic and Oyster Sauce.

Ingredient

1/2 tablespoon

Sesame Oil

1 tablespoon

Oyster Sauce

1 tablespoon

Soy Sauce

1/2-1 teaspoon

Sugar

Cooking instructions

* Step 1

Cut Lettuce into chunky pieces. Finely chop up Garlic. Thinly slice Beef Steak. Combine all the Sauce ingredients in a small bowl. In a separate small bowl, combine Potato Starch and Water. Prepare everything before you start cooking.

* Step 2

Heat Sesame Oil in a large frying pan over hight heat, cook Beef and Garlic. Lightly season with Salt & Pepper (OR Ground Chilli).

* Step 3

Add Lettuce and stir until Lettuce is softened but still crunchy. Add the Sauce and stir to combine. Mix Potato Starch mixture and add to thicken the liquid in the pan. Stir to combine and it is done. Enjoy it immediately with freshly cooked Rice.

The other day, someone cooked my ‘Kimpira’ Konnyaku (Konjac) and shared the Cooksnap of the dish, and that made me feel very nostalgic because the dish always makes me think about my grandmother. Today I cooked Konnyaku (Konjac) with Beef. The dish has similar flavour to ‘Kimpira’ Konnyaku, but more complex. You got to serve this dish with freshly cooked Rice.

Ingredient

2 teaspoons

Sesame Oil

2 tablespoons

Soy Sauce

2 tablespoons

Mirin

Cooking instructions

* Step 1

Rinse Konnyaku Block, slice thinly (4-5mm thin), make a slit in centre, insert one end into the centre slit, then flip over. Boil Water in a saucepan, cook Konnyaku pieces for 1-2 minutes, then drain.

* Step 2

Heat Sesame Oil in a frying pan OR you can use the saucepan that you used to boil Konnyaku. Cook Beef over medium heat, then add the drained Konnyaku, Garlic and Chilli, and stir. Add Soy Sauce, Mirin and Sugar, and cook until the sauce is almost gone.

* Step 3

Sprinkle with some finely chopped Spring Onion (OR/AND Toasted Sesame Seeds) and serve with freshly cooked Rice.
