This is another super easy dish that you can make with a small can of Tuna. If you have already cooked Rice, it is super quick and easy as you don’t need to cook anything. Just mix the sauce ingredients and add canned Tuna to the sauce. If you don’t have Kimchi, the Tuna mixture tastes good without it. You may wish to add Egg, Avocado, OR some salad vegetables to make the dish more nutritious.

Ingredient

1 teaspoon

Sugar

1 teaspoon

Soy Sauce

1 teaspoon

Sesame Oil

Cooking instructions

* Step 1

In a small bowl, combine Sugar, Soy Sauce, Sesame Oil and Gochujang (Korean Spicy Miso). Add drained Tuna and mix to combine, then add Kimchi as well.

* Step 2

Half fill a bowl with warm Cooked Rice, place Tuna and Kimchi mixture, cover with Nori, and sprinkle with finely chopped Spring Onion and some Toasted Sesame Seeds.

This dish was originally s simple stir-fry dish. I used to just stir-fry Snow Fungus and Eggs. One day I added Chicken Stock to it and thickened it with Potato Starch. I liked the result very much, and I made it into a rice bowl dish, as I always eat it with rice. This dish is very filling.

Ingredient

1 teaspoon

Rice Vinegar

1/2 teaspoon

Salt *OR as required

1/2 teaspoon

Soy Sauce

1 teaspoon

Potato Starch

Cooking instructions

* Step 1

Soak Dried Snow Fungus in cold/warm water until softened. Wash very well and drain. Remove the hard bottom bits if required, and tear into small pieces.

* Step 2

In a small bowl, combine all the Sauce ingredients except Potato Starch. Taste the sauce and alter the amount of Salt depending on the saltiness of the stock. You need to season the sauce strongly. Once it is seasoned, add Potato Starch and mix well.

* Step 3

Lightly season Egg with Salt & White Pepper. Heat about 1/2 tablespoon Oil in a frying pan over medium heat, cooked Egg softly and transfer to a plate.

* Step 4

Add an extra small amount of Oil to the pan, cook Garlic, Spring Onion and Snow Fungus. When Spring Onion is cooked, stir the sauce and add it to the pan. Stir until the sauce thickens, return the Egg, sprinkle with Vinegar, and mix to combine.

* Step 5

Half fill a bowl with Freshly Cooked Rice and cover it with the mixture.

Because I usually cook for four people, preparing a meal just for me can be oddly challenging. A ‘Donburi (Rice Bowl)’ dish is always a good option. I stock Canned Mackerel in my pantry for always as Mackerel is my favourite fish (and fresh mackerel is rarely available where I live), and a small 125g can of Mackerel is just perfect for single serving. I have shared my ‘Miso Mackerel Don’, here is another yummy and easy ‘Curry Mackerel Don’ which will never disappoint you.

Ingredient

1 can (125 g)

Mackerel

1/2 tablespoon

Oil

1 pinch

Salt

1 teaspoon

Curry Powder

1 teaspoon

Soy Sauce

Cooking instructions

* Step 1

Drain the Canned Mackerel and discard the brine or water.

* Step 2

Heat Oil in a frying pan over a medium heat, cook sliced Onion, Garlic and Green Vegetable until onion is transparent. Season with Salt and Curry Powder.

* Step 3

Add Mackerel, Sake and Soy Sauce, simmer over a low heat for a minute, and let all combined well.

* Step 4

Half fill a bowl with freshly cooked rice and cover it with the Mackerel mixture.

Off-cuts or already diced Salmon are cheaper than good-looking fillets, and they are perfectly suitable for this dish. Using ready-to-use Baby Spinach, I don’t need to wash or cut anything, and this ‘Teriyaki Salmon Rice Bowl’ can be made in 5 minutes. Another super easy meal.

Ingredient

1 pinch

Salt

1/2 teaspoon

Oil

1 tablespoon

Mirin

1 tablespoon

Soy Sauce

1/2-1 teaspoon

Sugar

Cooking instructions

* Step 1

Combine Mirin, Soy Sauce and Sugar in a small bowl.

* Step 2

Remove bones from Salmon and cut into bite-size pieces. I usually use skinless off-cuts. Lightly season with Salt.

* Step 3

Heat a small amount of Oil in a frying pan over medium heat, and cook Salmon. When Salmon is cooked, pour the sauce over and keep cooking until the sauce thickens. Add Baby Spinach and stir to combine.

* Step 4

Half fill a bowl with Freshly Cooked Rice, place Spinach and Salmon, and sprinkle with some Toasted Sesame Seeds. *Note: You may wish to add Spring Onion as well.

This is another super easy rice bowl dish that I often make for my lunch. It is a great dish to have on a hot summer day as you don’t need to cook Mackerel. You can add some Salad Vegetables to it. Wakame is also a good addition.

1 teaspoon

Sugar

1 teaspoon

Sesame Oil

* Step 1

In a small bowl, combine Soy Sauce, Sugar, Sesame Oil and Gochujang (Korean Spicy Miso). Add drained Mackerel and mix to combine, then add Kimchi as well.

* Step 2

Half fill a bowl with Freshly Cooked Rice, place Mackerel and Kimchi mixture, and sprinkle with finely chopped Spring Onion and some Toasted Sesame Seeds.

* Step 3

*Note: You can add some Salad Vegetables, such as Cucumber, to the mixture. Wakame (a sea vegetable) is also a good addition.
