* Step 1

First for preparing korma see my last recipe. I had shared beef korma recipe in another style. By following the steps prepare the korma.

Now for the rice heat up a large vessel with oil add all the whole spices sauté it then add 5 cups of water and salt bring it to boil.

* Step 3

Now add soaked and drained rice and again boil it till water is absorbed then simmer the flame and cover the lid, cook it for 10-12 minutes on medium flame.

* Step 4

After that in a vessel make a layer of rice then a layer of beef korma and sprinkle some chopped coriander and mint and fried onion again make a layer of all the remaining rice and garnish with some chopped coriander and mint leaves and fried onion.

In a bowl mix food colour and 1 tbsps water and pour it on the top.

Now cover the lid and put it in dum on iron tawa for 8-10 minutes. Then turn off the heat.

Cooking instructions

* Step 1

First, in a pressure cooker heat oil add all the whole spices sauté it then add sliced onion fry till soft then add ginger garlic paste turmeric powder and salt mix it and fry for a minute.

* Step 2

Now add the mutton pieces and fry for 2-3 minutes on high flame then add all the powdered masala and mix it well now add enough water and pressure cook for 20-25 minutes till it’s tender.

* Step 3

Meanwhile, peel off the eggs and heat 1 tsp oil in a pan add a little bit of turmeric powder and fry the eggs from all the sides and keep aside.

* Step 4

After mutton are tender then transfer it to a Kadhai and cook it on high flame and add chopped tomato and green chilli mix it.

* Step 5

After that add the fried eggs and cook it on high flame till it becomes dry and oil separates on the top and then switch off the flame.

Now for rice heat up a large vessel with oil add all the whole spices sauté it then add 4 cups of water and salt.

BRING it to boil then add soaked and drained rice and boil it till all the water soaked then simmer the heat for 15-20 minutes then switch off the flame.

Our rice and gravy are ready.

Now for assembling -Take a large vessel make a layer of rice then a layer of mutton gravy sprinkle some chopped coriander leaves and fried onion again make a layer and a layer of all the gravy and sprinkle some chopped coriander and fried onion, at last, make a layer of all the rice sprinkle chopped coriander and fried onion and tomato.

At the top place the eggs and in kewra water add food colour and pour it on the top.

Now heat the charcoal then put it in the vessel and add one tsp butter suddenly cover the lid.

Now place it on dum for 15-20 minutes. And our delicious smoky flavoured dum biryani is ready. Serve with raita or salad.

3 . Chicken barrah

Very very delicious recipe.

Ingredient

1 kg

chicken

150 gms

curd

Cooking instructions

* Step 1

First, wash the chicken nicely then make deep cuts on the pieces for absorbing the masala perfectly.

* Step 2

Now grind the green chilli coriander leaves and fried onion to make fine and smooth paste by adding half curd in it.

* Step 3

Then add all the masalas in it and mix it very well.

* Step 4

Now take a piece and coat it with the mixture nicely. Do the same with all.

* Step 5

Cover and marinate it for 1 hour.

* Step 6

After 1 hour heat a pan and add 3 tbsps butter then add the marinated chicken pieces, cover it and cook it on medium heat for 12-15 minutes or till it’s become tender.

* Step 7

After 15 minutes open the lid and flip the pieces and add the remaining masalas and fry it with the pieces.

* Step 8

Cook it from both sides by flipping it till it becomes dry and also the grill marks are formed on it.

* Step 9

After that on gas stove put some charcoal and place a rack on it then put the pieces on the rack and roast it from the sides till it’s done.

* Step 10

Our delicious chicken barrah is ready. Serve with green chilli chutney.

Ingredient

1 kg

beef

1 &1/2 tsp

coriander powder

Cooking instructions

* Step 1

First take beef pieces in a large mixing bowl add all the listed masala, curd, coriander leaves, mint leaves, green chills and salt. Mix it and keep aside.

* Step 2

Now heat up a pressure cooker with oil add whole spices, saute it then add sliced onion fry it till brown in colour then add all marinated beef pieces with all the masala and give it a good mix and cook for a minute on high flame.

Now cover the lid and cook on high flame for one whistle then cook for 15-17 minutes on low to medium flame.

* Step 4

Meanwhile for the rice, heat up a vessel with oil add whole spices saute it then add 4 cups of water and salt bring it to boil then add washed basmati rice, mix it and cook on high flame till water is absorbed.

Now cover the lid and cook for 10-12 minutes on medium to low flame.

* Step 6

Now open the lid of pressure cooker stir it and again put it on heat and cook on high flame to remove any excess water and switch off the flame.

Our korma and rice is ready now it’s to assemble it.

Take a large vessel place a layer of rice then put korma and spread it, sprinkle some fried onion, chopped coriander leaves, chopped mint leaves and some tomato and again place a layer of all the remaining rice and spread some fried onion, coriander, mint leaves and tomato. Sprinkle the food colour over it.

* Step 9

Now heat up a iron tawa and put the vessel on dum for 10 minutes and our delicious beef biryani is ready.

Cooking instructions

* Step 1

First take a bowl add chicken pieces and 1 tsp Ginger garlic paste turmeric powder lemon juice black pepper powder and salt, mix it and leaves for 30 minutes.

* Step 2

After 30 minutes fry it and keep aside.

First heat up a pan with oil add all the whole spice and sauté it then add sliced onion, fry it till golden brown then add ginger garlic paste mix it and all the listed masala and give it a good mix. Now add curd and chopped tomato and green chilli and fry it for 7-8 minutes on medium flame till oil separates.

Now add the fried chicken pieces and mix it nicely and add 1/2 cup of water, cover the lid and cook for 10-12 minutes on medium flame.

* Step 5

After 10 minutes open the lid and cook on high flame to remove any excess water and our chicken korma is ready.

Now heat up a vessel with oil add all the whole spices of listed rice ingredients sauté it and add 4 cups of water and salt bring it to boil then add drained rice in it, boil it on high flame till water absorbed then cover and cook for 15 minutes on medium to low flame.

* Step 7

Our korma and rice is ready now it’s to to assemble it.

* Step 8

Take a heavy bottomed vessel put a layer of rice and spread the chicken gravy well and sprinkle some chopped coriander leaves and fried onions and again put remaining rice over it, spread some chopped coriander leaves and fried onion. Sprinkle yellow food colour and kewra water on it and cover the lid very well.

* Step 9

Heat up a tawa and put the vessel on it and put it on dum for 15-20 minutes. And our delicious chicken biryani is ready to serve.
