These were my favourite cookies when I was a kid, packed with nuts and chocolate. I found this free-from friendly version online from the Minimalist Baker and have tweaked it a little to suit whatever ingredients are at home.

Ingredient

2.5 TBSP

sugar

baking soda

1/2 tsp

Cooking instructions

* Step 1

Preheat the oven to 176 C (350 F). Line two baking sheets with parchment paper.

* Step 2

Make flax egg by mixing ground flaxseeds with water, let sit for 5 minutes to set.

Add melted oil/butter, sugar and vanilla. Add flax egg and mix until smooth.

Add almond flour, GF flour, baking soda and salt and mix with a wooden spoon or spatula until a dough forms.

Fold in chopped nuts, oats, chocolate, and coconut until combined. If the mixture is too crumbly, I add another tablespoon or two of peanut butter.

Form into balls and arrange on the prepared baking sheets, then press them into disks. Bake for 12-15 minutes until golden brown.

Ingredient

* Step 1

1. In a container or a bowl, add the teff flour, sweet white sorghum flour, gluten-free sweet rice flour, ground hazelnuts, and lastly add in the xantham gum.

* Step 2

2. Shake it up if in a container, or mix it well if you did it in a bowl.

* Step 3

3. Preheat your flat crêpe pan to medium to high heat. Crack 3 eggs in a bowl and then add in some milk, sugar, and vanilla extract. Whisk this mixture for a few minutes.

* Step 4

4. Measure out 3/4 cup of your crêpe mixture and add it into the egg mixture. Whisk the batter together and you have your crêpe batter! It will look runny but that is right.

* Step 5

5. Take a little bit of butter and coat the heated pan. Pour approximately 1/3 cup of batter into the center of the crêpe pan and swivel it around with a back and forth shaking motion until you have a thin, round crêpe.

* Step 6

6. Allow crêpe to cook until edges become golden brown, then flip and briefly allow the other side to cook. (10-15 seconds) Slide it right off the pan to a plate.

* Step 7

7. Dress with a small amount of Nutella, jam or maple syrup down the middle, roll up, cut into two pieces and serve warm.

My daughter requested blueberry cookies to take to preschool on her birthday. This is a popular recipe we found online and tweaked to make them gluten and dairy free.

Ingredient

1 cup

sugar

1 1/2 tsp

baking powder

1/2 tsp

salt

Cooking instructions

* Step 1

Set oven to 375°

* Step 2

In a mixer, cream the sugar and butter. Then add the crushed blueberries. Let mix on high for 5 minutes.

* Step 3

In a large bowl mix flour, salt, and baking powder. Add to the mixer slowly until you have a loose dough.

* Step 4

Freeze for 30 minutes then roll into balls. Lay out on parchment paper and bake for 10 - 12 minutes until getting brown on the edges.

Yet another chicken bacon ranch recipe. This one is Gluten and Dairy free.

Ingredient

6-8 strips

bacon

3 cloves

garlic minced

Cooking instructions

* Step 1

Set oven to 375°

* Step 2

While boiling your noodles, fry your bacon in a large pan.

* Step 3

Remove bacon and throw in your diced onions and minced garlic. Cook for about 5 min.

* Step 4

Add cream cheese, coconut milk, ranch packet, and 1 cup of mozzarella. Mix over medium heat until smooth.

* Step 5

Mix ranch mixture, pasta, chicken, bacon, and green onion. Pour into a 13x9 pan and cover with mozzarella.

* Step 6

Bake for 25 - 30 min. Serve hot.

* Step 1

Pre-heat oven to 350F. Sift dry ingredients in a bowl. Mix well. Set aside

Mash bananas in a big bowl, add egg and butter. Mix well. Gradually add dry ingredients while mixing. Continue mixing until all ingredients are well distributed.

* Step 3

Add walnuts. Arrange paper cups on a cupcake or muffin mold. Scoop the banana mixture in each cup. Bake for 25 minutes or use the toothpick test.

Note: It is best to check starting on the 20th minute. Remove from the oven and let it cool down. Serve!
