#Global Apron 2024 week 21 ingredient choice pork loin. When you have a bit of meat left but not enough for another meal add rice and veggies and make it a full sized meal.

Ingredient

2-3 cloves

garlic (optional)

3 tablespoons

vegetable oil,divided

1 teaspoon

salt

1/4 teaspoon

ground black pepper

2 tablespoons

soy sauce

Cooking instructions

* Step 1

Dice onion. Mince garlic if using. Cut pork into very small cubes.

* Step 2

Heat 1 tablespoon oil in wok or large nonstick frying pan over medium high heat until shimmery. Add eggs and gently scramble. Transfer eggs to bowl and set aside.

* Step 3

Add onion, garlic, salt and pepper cook to soften about 3-5 minutes. Add left over pork to pan and cook until heated thru.

* Step 4

Add remaining oil heat about one minute, add cold rice, frozen vegetables and soy sauce. Stir fry until rice is heated thru add eggs back to pan. Stir and remove from heat. Serve.

Ground lamb, spiced and rolled into firm balls, then stirfried and boiled, releases its flavors and fats into the wok, and spices up stirfried rice and vegetables to a delicious dinner. Serve with pickled vegetables like atjar tjampoer and shrimp chips, krupuk udang. Pickled vegetables take away the sting of spicy dishes.

Ingredient

basmati rice

Cooking instructions

* Step 1

Mix ground lamb with pepper sauce and sweet soy sauce, add breadcrumbs and fresh eggs, mix thoroughly till firm. Let stiffen up in fridge half hour. Add lamb meat balls to 2 Tbs peanut oil in wok and stir till brown, medium flame, 5 minutes, add onion, garlic and ginger, glaze, add water, bring to boil, cook 10 minutes till sauce is thick.

* Step 2

Add vegetables to wok and stir fry till fragrant. Add rice and stirfry ten minutes till rice has absorbed the sauce and vegetable juices, meat is browned and rice is fried crispy. Enjoy.

* Step 3

As a side, serve with fermented pickled vegetable condiments called Atjar Tjampoer. They neutralize the sharpness of spicy foods and taste deliciously refreshing.

I hate wasting anything so I used the leftover sauce from my Salisbury Steaks and made tasty rice dish 😊

Ingredient

1-2 Cups

White Rice

1-2Tbsps.

Vegetable Oil

2Tbsps.

Onion Powder

Cooking instructions

* Step 1

Cook Rice according to package directions in a medium pot. Once done stir in sauce. Then top with Parmesan cheese. Serve immediately and enjoy or you can let sit covered til ready to serve 😋.

* Step 2

Sauce*** ***Sauté everything in a large skillet til slightly thickened and onions are tender. **If still too soupy make a slurry with flour or cornstarch and water then add to sauce. Cook til sauce is thickened to desired consistency.

* Step 1

Place chicken and broth in boiler, bring to a boil, cook 5 minutes then reduce heat to simmer until chicken will pull from the bone.

Bring broth back to a boil stir in rice. Reduce heat and simmer until rice is tender. Season with salt and pepper to taste. You can cook all the broth out or leave it “brothy”. My bunch prefers it brothy.

New crop basmati arrives here in June, long grain rice that absorbs gravies and sauces better than short rice. Served with spicy turkey sauce and braised turkey wings.

Ingredient

4 cups

water

1 Cup

flour

1 Tbs

sage

Cooking instructions

* Step 1

Bring basmati with ingredients to rolling boil, stir, put lid on, boil till foam pushes lid up, turn off heat, rest an hour.

* Step 2

Wash, dry, then flour turkey wings in plastic bag with flour, spices, fry in wok, set aside

Prep vegetables in turkey wok drippings

* Step 4

Add gravy ingredients with turkey wing pieces in wok, lid on, simmer an hour

Serve over basmati rice, enjoy.
