Whosayna’s Khabsa

Cooking instructions

* Step 1

Blend yogurt, tomatoes, cummin powder, garam masala, turmeric powder, chicken stock cube and green chilli... Braise onions in 1/2 cup ghee and oil, add cinnamon sticks, cloves, cardamon and black pepper, till onion is golden brown colour... Add blended tomato mixture, rice, lemon rind, lemon juice and saffron, salt, and water... Boil rice and let it cook, then keep for simmering...

* Step 2

In a pan heat up 1 tbsp of ghee and fry the almonds and cashewnuts add carrots and capsicum, add this to the rice and toss well, put colors on each side, add coriander leaves and mix it, let it simmer... When rice done make dhuuan/smoke of charcoal and ghee on a bowl made of foil, cover the lid properly and let the smoke be intact.... Serve Mandi with grilled Chicken, Mutton or Kebobs....
